Wow! Look how much can change in just one year! Last year, I was a winner in a contest by @syscocanada for @syscofoodie from the Restaurants Canada @rcshowcanada show... fast forward one year, Sysco appointed me Canada's Vegan/Plant-based chef and I'm featuring various brands in the Bunch of Brunch show, which is broadcasted live on their channel. My first demo is tomorrow, April 23, 2021 at 12:30pm with Beyond Meat... I'd love if you could tune in and support me and leave a little comment or like! . Me, rethinking my foodlosophy. . This past year I’ve been changing how I do things, that includes eating. I’ve been a conscious, clean eater for many years, and 6 years vegan but one thing I really value now, is Quality over quantity and knowing how what I put it in my body is affecting me. . I care less about calories, more about energy, I’ve experimented with detoxing and intermittent fasting. I’ve always preferred food over supplements but now I drink my vitamins, my lemon... detox water before coffee and have cleansed my gut, my liver, my colon and even my brain is functioning even better. . We live in a polluted world, with polluted produce, with chemical shit storms in food that is heavily processed. There are parasites, HMO’s, pesticides, fluoride, poisons such as mercury... it’s not so much about the calories but the energy and value of the information the food contains within it. I feel and look better than ever and I can honestly say I feel I’m growing younger with age. . Don’t get me wrong, I still love food but maybe we need to stop worrying about how much we consume and consider how it actually affects you. Our metabolism takes so much of our energy, when you aren’t always digesting you can channel that towards more productivity or become lighter to channel source energy because you aren’t so weighed down by things connecting you to this material world. . Also, is the food your eating full of life and vitality? Or is it dead, fake or slowly rotting? I’m not saying people who consume meat can’t be healthy, but balance is everything, imbalance is the source of disease... just some food for though because we are what we eat, drink, think, hear, breathe and consume respectively. We are products of our environments and we need to be more conscious of what we are allowing to come inside of us. Currently there is no consumer safety act, new products and chemicals come into our environment every day and do not get tested, or if they do, it’s to test how dangerous it is, not how healthy or safe. When you have the staples and a few simple tools, a nutritious, delicious lunch only takes a few minutes to prep and even less to eat up. Raw vegan zucchini pasta, with cashews, sundried tomatoes, sautéed onions, black olive pesto, nutritional yeast, hemp seeds and all sorts of yummy stuff. . Ingredients:... 2 medium zucchinis (peeled if not organic) 1/2 cup cashews (roasted and salted) 1/4 cup sunflower seeds 1/4 cup crushed walnuts 1-2 tbsp pumpkin seeds 1/4 cup sun-dried tomato (sliced) 1/2 Small red onion (sautéed with 2 cloves of garlic) 1/4 red pepper (or use roasted red pepper) cut into cubes 2 tbsp hulled hemp seeds 2 tbsp nutritional yeast (it's sooo good and nutritious) 2 tbsp black olives Dressing: 1 lemon juiced (makes about 3-4 tbsp) 1.5 tbsp olive oil 1 1/2 tsp Italian seasonings salt and pepper to taste Fresh herbs (optional) I love mixing in fresh herbs for extra flavour.... I minced up some fresh basil, or rosemary is also good. All of the seeds and nuts in this provide a great source of protein, amino acids, and also help build collagen production and the nice part is aside from the 2-3 min to sauté the onion, and to make the zucchini noodles it is a grab-and-go recipe that you can whip up easily. :) If you don't have a spiralizer for the noodles, you can buy pre-cut noodles or you can just use a peeler and make them into flat/broad noodles by just continuously peeling it down. If you try this recipe, let me know how you like it! Serves 2-3 portions Enjoy :)
