The knife that started it all - now known as the Harayuki Yokuma Santoku - hangs in the Calgary shop as a testament to the quality of Japanese knives. Kevin first tried this knife in London, when he was sous chef of St. John restaurant. His mind was instantly blown by insane levels of sharpness he didn't know were possible. Upon returning to Canada he started selling knives off the back of his bike to support his own habit, and the rest is history. The Yokuma Santoku is still... one of our favourites. It's simplicity hides it's ferrari-like abilities, all thanks to super hard SRS15 stainless steel and incredible craftsmanship.
