I don’t know why, but I was really into having bread/biscuits this week. Every dinner included some sort of baked good. My favourite, and possibly the most impressive, is this quick focaccia. I got the recipe from my friend’s blog, https://toobusylivin.com//20/easy-weeknight-foccacia-bread/, and seasoned it with Herb & Garlic seasoning and shredded Parmesan cheese. It was so good! My daughter said it was her favourite bread from the week, so I think this needs to become part of my weekly rotation.

Since we launched our April 30-Day What's for Dinner Collection, this recipe has become a Consultant favourite! Ground Beef Pita Pizzas 2 tsp oil 1 lb (450 g) l...ean ground beef 2 tbsp water 1 tbsp + 1 tsp Greek Dressing Mix, divided 1 tbsp tomato paste 12 cup plain yogurt 4 pitas 1 tomato 12 English cucumber 14 small red onion 13 cup crumbled feta cheese, optional Toppings (optional): lemon wedges Preparation In Wok, heat oil over medium-high. Crumble in beef. Add water, 1 tbsp dressing mix, and tomato paste. Cook 56 min, breaking up large chunks as needed. In a small bowl, combine yogurt and remaining 1 tsp dressing mix. Dice tomato and cucumber. Thinly slice onion. Place pitas in Multipurpose Steamer. Cover; microwave on high 12 min until warm. Spread about 2 tbsp yogurt over each pita; top with beef, vegetables, and feta, if desired. Perfectly Balance Your Plate Serve with 2 cups leafy greens and a squeeze of lemon juice.
