The sun is shining and Spring is in full swing! We love a colourful and fresh bowl/ salad in warmer weather. Here's a delicious one for you to try! Cucumber & Tomato Quinoa Bowl 8 ingredients 15 minutes 2 servings... Ingredients 1/2 cup Quinoa (dry) 2 leaves Romaine (chopped) 1/2 Cucumber (medium, chopped) 1 Tomato (medium, chopped) 1 cup Chickpeas (cooked) 2 tbsps Feta Cheese (crumbled) 2 tbsps Lemon Juice 3 tbsps Parsley (chopped) Directions 1. Cook the quinoa according to the directions on the package, and set aside. 2. Divide the chopped romaine equally between bowls or plates. Top with equal amounts of quinoa, cucumber, tomatoes, chickpeas, and feta. 3. Squeeze lemon juice overtop and garnish with parsley. Enjoy! Notes Make it Vegan- Use vegan cheese or omit the feta completely. More Flavor- Cook the quinoa with broth instead of water. Add your favorite dressing overtop. Additional Toppings- Olives, capers, avocado, or red onion.

Happy Friday! We love one pot recipes for Friday evenings because they're so easy to make! Here's one for you to try that's easy but soo delicious! One Pot Creamy Mushroom Orzo 10 ingredients 25 minutes 6 servings... Ingredients 2 cups Water 16 Cremini Mushrooms (sliced) 1 tsp Sea Salt (divided) 2 1/2 cups Orzo (dry) 1 pint Unsweetened Rice Milk 12 ozs Chicken Breast, Cooked (cubed) 2 cups Fresh Peas (or frozen) 1 cup Basil Leaves (roughly chopped) 1/4 cup Parmigiano Reggiano (grated) 1/2 Lemon (juiced) Directions 1. In a large pot or Dutch oven, heat a splash of the water over medium-high heat. Cook the mushrooms until soft, about five to eight minutes, adding more water as needed to prevent sticking. Season with 1/3 of the salt. 2. Add the orzo, rice milk, chicken, peas, and the remaining water and salt. Bring to a simmer and cook uncovered, stirring occasionally for about 10 minutes or until the orzo is al dente. Add a splash of rice milk if more liquid is needed. 3. Stir in the basil and parmigiano reggiano. Divide into bowls and squeeze lemon juice overtop to taste. Enjoy! Notes Gluten-Free- Use brown rice pasta instead of orzo and adjust the water ratio and cooking time accordingly. Make it Vegan- Use marinated tempeh, tofu, edamame, or black beans instead of chicken. Use nutritional yeast instead of parmigiano reggiano. No Rice Milk- Use almond milk, dairy milk, oat milk, or coconut milk instead

Here's an amazing recipe for you to try in the New Year, for when you're craving sweets! Epicurious' Frozen Chocolate Bananas Ingredients... 2 ripe but firm bananas 6 ounces dark chocolate, chopped, or semisweet chocolate chips 2 tablespoons vegetable oil 1/2 cup granola, chopped pecans and walnuts, or sprinkles (optional) PREPARATION 1. Line a baking sheet with nonstick foil or parchment paper. 2. Cut the bananas in half and insert a Popsicle stick into each half, as shown. Place them on the baking sheet and freeze for 15 minutes. 3. Meanwhile, melt the chocolate with the oil in a Pyrex measuring cup in the microwave (check it every 30 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth. 4. Roll each banana half in the chocolate, then quickly sprinkle with your topping (if using). 5. Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week. It’s November and we’re finally seeing some of the weather we expect for our Canadian winters, which means ice and snow. November is also Fall Prevention Month. More than one-quarter of adults over sixty-five will fall each year, and this is the leading cause of fatal and non-fatal injury in this age group. Balance is a complex system that relies on three main aspects of our brain and body to keep us upright. Our inner ear, which senses head motions and rotations, is an impor...tant part of this intricate system. So too is the body’s somatosensory system, part of which is concerned with the sensation of touch, pressure, movement and position of our muscles and joints in space. And, of course, vision will inform us about our surroundings and the obstacles we need to avoid. As we age, the three main systems involved in balance can experience impairments. Combine this with reduced muscle strength and joint mobility and these impairments make our older adults more prone to falls. However, falling is not an inevitable result of ageing. Balance, and the ability to know where your body is in a three-dimensional space, is required for every movement you make. It should not be surprising, then, that balance can be learned, challenged, and improved. No matter the age, level of fitness, or athletic ability, every person will benefit from adding balance exercises into their routine -("Connect to Your Health", Dr. Leis & Dr. Holenski).
