This white boule is frowning disapprovingly at me because I haven’t posted on Instagram for so long!! I’ve been focusing more on my art - @kylawiebeart and @moksh7stories . But I am still baking every week! Hope you all had a good Easter weekend. Did anyone make Easter bread?
I ran out of spelt flour, so this week’s loaf ended up being a 10% spelt, 20% rye, 70% bread flour loaf. Look at it’s cute ear! (That’s that ridge on the top, in case you didn’t know. )
I experimented with some different sizes and shapes of my new favourite sourdough formula today!

Aaah! My kitchen is overrun!! What a huge order. I got a few orders of six loaves each, (which is a great way to order btw, because 5 or more loaves gives you 20% off!) and thus I’ve been swimming in loaves for the past couple of days.
Started off my baking day by accidentally sprinkling my countertop with icing sugar instead of flour.... some of my shaped loaves may have some extra caramelization?

Grandma's Two Hour Bread (to prove that I CAN make non-sourdough bread every once in a while!) I was talking with my mom's mom (fun fact, both of my grandmas are Wiebes, so I can't say "my grandma Wiebe and my grandma ---.. So I have to say "my mom's mom, and "my dad's mom.") on the phone yesterday and she shared her go-to bread recipe with me. It's pretty quick, can be used for buns or loaves, and converted to whole wheat if you so desire. This bread is very soft, a little... sweet, and perfect for a good ole normal nice bread. I made a sandwich using mayo, mustard, a veggie mix I made for a salad (peppers, cucumber, green onion, cilantro, black olives, chickpeas, tomatoes, garlic, red onion, lemon juice, salt, pepper), red onion slices, and spinach! YUMYUMYUMYUM! I'm going to do a "how to incorporate sourdough starter into regular recipes" blog post at some point, and I'll probably use this recipe or my dad's mom's bread recipe to do it! For anyone who bakes with sourdough, you know that you're always looking for a way to get rid of sourdough starter. Usually, that means...
