A while back, we asked a long time friend and artist, Shea Larkin, if he could do a chain saw carving that would bring our logo, Capsi, to life. Well, it took a while, as all great things do! Shea sent us pictures of the finished sculpture, much more than just chain saw art! It was breath taking in the photos. Today, I met Shea in Salmon Arm at the chain saw shack by DeMille’s. I was stunned! The beauty and attention to detail makes this piece truly amazing! It is a proud new addition to the Kyody Spice family! Thank you Shea!

Happy Valentine’s Day from Kyody Spices we will be enjoying smoked brisket nachos with Tropical and Classic Salsa, a bit of bubbly and some Sweet Heat chocolate bark for desert.

Dinner for two... Jalapeño Popper Stuffed Chicken with fresh asparagus. Delicious and easy! The filling is cream cheese, grated cheddar, diced Kyody Spices Pickled Jalapeños, diced green onion and bacon (cooked to crisp and crumbled or chopped). Mix it all together really well. Butterfly your chicken and pound it thin with a meat tenderizer (a bottle works too ). Season your chicken with salt, pepper, garlic powder and Kyody Spices Smoked Jalapeño Powder. Spread the filling ...evenly over the chicken and roll it up. In a shallow bowl whisk olive oil with lime juice and season with salt, pepper and some more Kyody Spices Smoked Jalapeño Powder. In a separate bowl, dump some Parmesan cheese in. Roll the chicken roll in the oil mixture and then in the Parmesan cheese. Bake at 450 for 25 minutes. You will love it!! January was our time to regroup, regenerate and renovate! The kitchen now boasts a brand new stove and lovely grey counter tops. Received a drool worthy idea from a Kyody Spice fan. Order your Sweet Heat Brown Sugar, Smoked Jalapeño Powder and Bold’n’Sassy BBQ Sauce today and give this a try! If you are in or near Kamloops, don’t forget you can just drop into Gourmet Greens Produce Market on Hillside and stock up! Smoked Turkey Drumsticks on the Traeger (4 Turkey Drumsticks) Ingredients for the brine:... 8 Cups of water (1/2 gallon) 1/2 cup of kosher salt 1/3 cup of Kyody Spices - Sweet Heat Brown Sugar 1 tablespoon dried thyme 1 tablespoon dried sage 3/4 tablespoon to black pepper 1 tablespoon of garlic powder 1 tablespoon of onion powder 1/2 teaspoon ground cloves 1/2 teaspoon of paprika Add all ingredients to the 8 cups of water, bring to a boil. Let cool. Rinse the turkey drumsticks and place in a container (or larger ziplock bag) along with the brine. Make sure the drumsticks are completely covered. Refrigerate for 24 hours. Remove drumstick from the brine and rinse. Apply Traeger Chicken Rub as well as 2 teaspoons of Kyody Spices - Smoked Jalapeño powder. Smoking on the Traeger: 1 hour with setting on smoke only 2 hours at 275 degree Apply BBQ sauce to the top of the drumsticks, smoke for 20 more minutes. Turn the drumsticks over apply BBQ to the other side. Continue smoking until drumsticks reach 170 degrees. Let rest for 10 minutes and serve.
