Niall shows us how to quarter an Avonlea Clothbound Cheddar. Use a serrated knife (like a bread knife) to cut through the cloth. Make sure the cloth is cleanly cut before moving on to the wire. Once it is quartered, you can remove the cloth to continue breaking down the wheel, or leave it on to create a rustic look in your display. @cowscreamery

RACLETTE Raclette is both a type of cheese and a traditional dish, with origins in the alpine regions of France and Switzerland. The cheese is relatively young, giving it a silky texture and low levels of fat separation when heated. We are using Raclette Kaiser from Fritz Kaiser.
