TALKING A LITTLE ABOUT THE FLAVOURS OF SPAIN, FRANCE AND CANADA TODAY. From Spain, we have our sheep truffle cheese. Infused with just the right amount of truffle to give it heavenly balanced, earthy note. Enjoyed grated over a fresh bowl of pasta, and with a lovely glass of your favourite white wine. From France, our Fromage d'Affinois. It's a double-cream soft cheese that's luscious and creamy, yet lighter, smoother and has a silkier texture than other Brie cheese.... The flavour is mild to medium and pares deliciously with champagne, fresh berries, or other fruits, and fruity jellies. And finally, from Quebec, Canada, Le Bleu D'Élizabeth. Comte is a semi-hard cheese with stronger tones of butter and hazelnut, bursting with dreamy waves of sweet fruity and salty undertones. Its texture is dense, firm, grainy, and creamy smooth....
