These confit cherry tomatoes were slow cooked for two hours in canola oil at the lowest temperature with 2 garlic cloves, fresh basil, purple basil, sage, rosemary, thyme, and sea salt. Tonight is the first time I try the New York style setting on the Breville Smart oven Pizzaiolo. I went with a few pepperoni pizzas using Saputo cheese and local Roma pepperoni sticks which I thin sliced myself to get that cup and char effect. Pizzas came out great, nice and crispy. Experiment #2. Reduced the broil by 30 seconds, excellent result. Experiment #1. So this pizza was baked in a regular home oven at convection 550f with two baking stones. I must say I’m pretty impressed with the results. First I moved the oven grills, one at the very bottom and the other one on the second from the top. Next I let my stones heat up for one hour. I stretched and topped my Margherita without the mozzarella for the first part of the bake which was 3:30 minutes on the bottom stone. I took it out, put the mozzarella and turned the pizza 180 degrees and put the oven on broil before sliding the pizza on the second stone (second grill from the top). I figure if I reduce the second bake by 15-30 seconds it’ll be perfect. Another experiment would be to move the top grill to the very top to see...thanks @thepizzabible for the tricks @ Saint-Léonard (Quebec)
