One of my favorite parts of my business is the friendships I’ve formed through it! Back when we were able to go out places, we would meet up in person regularly. So much fun!

Tonight’s treat...Chai Tea Cookies! Who wants one? Chai Tea Cookies Cookie Ingredients ... 1 c butter softened 1/2 c vegetable oil 1/2 c powdered sugar 1/2 c white sugar 1 egg 1 tsp vanilla 2 c flour 1/2 tsp baking powder 2 1/2 tsp chai tea spice Glaze Ingredients 3/4 c powdered sugar 1/2 c milk 1/2 tsp vanilla 1/2 tsp chai tea spice Preheat oven to 350 degrees. Combine butter, sugars, egg and vanilla in a stand mixer. Whisk dry ingredients together and then add to butter mixture and beat for about 2-3 minutes. Use a 1 ice cream scoop to place dough on to a parchment lined cookie sheet. Chill in freezer for 10-15 minutes. Bake at 350 degrees for 10-14 minutes. If you’re going to use the glaze, do it just as you’re going to eat the cookies as it tastes good but doesn’t harden up. Mix glaze ingredients well and brush over top of each cookie. Enjoy!

One trip to the barn and 4 trips back and forth to the school all before 1pm today! Who can relate? Life can be hectic right? But am I complaining? No way! For one, I’m grateful for every second I have with my kids and my horse. (although sometimes that means a lot of driving )... But also, it’s sunny, I love my truck and I’m picking my own schedule (thanks to being the boss). Not only that, I can also share the platform I use with anyone that’s interested. Sound intriguing?

Dinner tonight! Would you make it? Creamy Chicken Enchiladas 6 flour tortillas... 2 cups cooked, shredded chicken 1 c shredded cheddar cheese 1 c shredded Monterey Jack cheese 3 T butter 3 T flour 2 c chicken stock 1 c sour cream 1 (4 oz can) green chilies Preheat oven to 350 degrees Mix the two cheeses together. Combine chicken with 1 cup cheese. Divide between tortillas and roll up. Place in greased 9 x 13 pan. Melt butter over medium heat. Whisk in flour and then cook for one minute stirring continuously. Add the chicken broth and whisk until smooth and thickened. Remove from heat and add sour cream and chilies. Pour sauce over top of tortillas and then top with the remaining cup of cheese. Bake for 20-25 minutes. Serve with salad and avocado. PS the package of tortillas I had was missing one so I only had 5 available.

Haha, just realized my shirt matches! This is the recipe I made this morning. Who wants one? Blueberry Banana Oatmeal Muffins Ingredients... 1 cup milk 1 cup whole rolled oats 1 and 1/4 cups all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp ground cinnamon 1/2 tsp salt 1/2 cup unsalted butter, melted and slightly cooled 1/2 cup honey 1 large egg 1 teaspoon pure vanilla extract 3 ripe bananas 1 cup fresh or frozen blueberries Instructions Combine milk and oats. Set aside for 20 minutes so the oats puff up and soak up some moisture. This is crucial to the recipe! (I usually melt the butter now so it has a few minutes to cool.) Don’t do this the night before as that’s too long for soaking. If you find the oats haven’t soaked up any moisture after 20 minutes, give it a stir and wait 10 more minutes. Preheat oven to 425F. Spray a 12-count muffin pan with nonstick spray or use cupcake liners. Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl until combined. Set aside. Whisk the melted butter, honey, egg, mashed bananas and vanilla extract together in a medium bowl until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the soaked oats (milk included, do not drain) and blueberries. Fold everything together gently just until combined. Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350F. Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350F. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling. Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.
