I love Italy and it’s wines. I’ve been all over Italy and can’t wait to go back but I haven’t been able to get up to Alto Adige as of yet. Was invited by a buddy to go for lunch at @centinicalgary and this is what Fabio came up with. I believe this dish isn’t on the menu yet and will be an appetizer, but it sure was good. Chicken livers fried and finished with balsamic vinegar on puff pastry. Can’t wait to see the final product on the menu. This Zinfandel from @cgdiariewinery in the Sierra Foothills of Northeastern California is one of our longest standing wines in our portfolio. The 2014 vintage, which is the current release vintage, is drinking so well right now. Not your typical Zin you see in this day and age but more like this is the way Zin should be made. It’s not a jammy, blow-the-back-of-your-head-off Zin you see from a lot of other wineries. Very well balanced with the the fruit, acid and the tannins a...ll syncing together to make a very pleasant glass of wine. If you look at the cork, you will see the sediment coming out and attaching to the cork. This is tartaric acid and potassium. This is a good sign the wine is well made. This wine always sells very well as once you buy it, you always want more. Seeing as the big game was by the ocean, Super Bowl Sunday supper was spaghetti with tomatoes, scallops and shrimp. Garlic, parsley, chilli flakes and basil added some great background flavours. Paired the dish with a glass of Sardinian Vermentino (won’t say the name as they aren’t in our portfolio yet) and finished the dish with a glass of the @fattoria_il_colombaio Contessa AVA Chianti. Was looking to make a nice, light lunch. Nothing caught my eye in the fridge so I decided to try something new (to me). Pan fried veggies (red onion, asparagus, red pepper and spinach) in EVOO along with a little chili pepper flakes, a clove of garlic and some cumin. On top of that a placed some baby arugula, pickled beets, chèvre and a few yellow grape tomatoes and some orange cherry tomatoes along with some good EVOO and Aceto Di Balsamico. The sweetness was fantastic and the whole dish was so nice and fresh. Definitely a keeper. Did a 90th birthday party dinner for my buddy’s mother and his family. Started out with Zucchini Carpaccio, Caprese Salad on top of basil pesto and then Escaped Clams, which is fettuccine with Prosciutto and garlic all chopped up together and heated at low temperature with fresh Roma tomatoes added right at the end before putting the pasta in the pan. They paired up a Petit Chablis, a French Rosé and Veneto Rosso with the good. The latest addition to our portfolio. Berizo is a Tuscan IGT consisting of Cabernet Sauvignon, Merlot and Petit Verdot. It comes across as a Bordeaux blend but is still a great example of what you see from Tuscany. Halibut is still in season so we went to @market_seafood in the @calgaryfarmersmarket to@pick this up. Pan fried the fish for 1 minute and then into the oven at 300F for around 18-20 minutes. We had various types of cherry and grape tomatoes growing in the garden so I was able to utilize those as well by adding them to the pan after the fish was plated and used them as a dressing. We bought some 12 year old D.O.P Aceto Balsamico Tradizionale Di Modena the other day. Had to give it a try with some fresh figs and a chunk of good Stilton cheese. It went down quite well.
