Happy Thanksgiving! From LEAFWMC Today in our PODS Support Session we focused on gratitude and mindfulness. Did you know that an attitude of gratitude can shape our mind physically as well as emotionally? Expressing gratitude strengthens our decision centers and builds brain power for positivity. Our feature recipes at PODS included Spicy Pumpkin Hummus adapted from mylifecookbook.com (https://mylifecookbook.com/easy-spicy-pumpkin-hummus-5-min/)... & Pear Gingerbread Upside-Down Cake demonstrated in our video. Here are the ingredients: Topping 1/4c butter, melted 1/4c Truvia brown sugar blend 1 can pear halves drained and sliced Cake Wet Ingredients 1/4c butter, softened 1/4c Truvia brown sugar blend 2 eggs 1 c apple sauce 1/2 c molasses Dry Ingredients 3/4 c EACH all purpose flour & whole wheat flour 2 tsp ground ginger 1 tsp EACH baking powder and baking soda 1 tsp ground cinnamon 1/2 tsp ground cloves 1/4 tsp salt Follow the video and enjoy a warm delicious spice cake for your long weekend!

FOODIE FRIDAY Try these delicious air-fried chicken and avocado egg rolls! Commonly deep fried, this recipe uses an air fryer to achieve a fried-like texture without the excess oil. Do you know what the difference is between an air-fryer and a deep-fryer? Here’s how deep -frying works: Enough oil needs to be used so the food can be submerged since oil acts as a heat conductor. This reduces cook time. To continue, the Maillard reaction breaks down sugar and protein at the su...rface of the food, resulting in a golden brown. Lastly, the frying process removes the water from the surface resulting in a crispy texture. Here’s how air-frying works: Little to no oil is necessary for air-frying to work as this process relies on extra heated air, and you also end up with a crispy finish! With the lower oil content, the cooking time increases when using an air-fryer. Since less oil is used, calories are also reduced. -Ingredients- 12 oz cooked skinless and boneless chicken meat, chopped 2 ripe medium avocados 2 tsp cumin 1/2 cup diced red onion 1/3 cup cilantro, finely chopped and packed juice from 1 lime 1 egg 10 egg roll wrappers pinch of sea salt & pepper -Instructions- 1) Set air fryer to 420F. 2) Add all the ingredients to a bowl and mix well together. 3) In a small bowl, beat an egg. 4) Add 2 2.5 tbsp of the stuffing to the edge/corner of an egg roll wrapper. Use your finger or a paintbrush to draw a line around the inside edges of the wrapper. Then roll it over to seal the side with the stuffing, then fold in the sides and continue rolling up like an egg roll. 5) Repeat step 4 until all the stuffing is used up. 6) Place egg rolls in the air fryer. Brush the outside of the egg rolls with the remaining egg mix, then gently spray the outside of them with oil. 7) Air fry for 10 12 minutes, flipping halfway through. Enjoy the egg rolls with salsa (see recipe below)!
