Pineapple salsa anyone? This is one of my favorite things to add on my tacos or rice bowls. Slam packed with fresh nutritious ingredients. We have : 1/2 cup diced red onion, 3/4 cup diced fresh tomatoes, 3/4 to 1 cup fresh diced pineapple, 1 to 3 seeded and diced jalapenos (depends on your spice preference), 1 TB chopped cilantro, juice of 1/2 - 1 lime, salt and pepper to taste. Uhhhh, where's the protein bro? If you feel the need to ask that question keep in mind. Protein is in a ton of different things that have absolutely nothing to do with meat or dairy. Here we have some nice garden kale, onion, mushroom, garlic and fresh lemon dill pasta which makes for a quick and easy meal. We made and alfredo and subbed the milk and butter with cashew milk and coconut oil.

Cauliflower, mixed beans, celery, diced tomatoes, carrot, ginger, garlic, bok choy, kale, sweet potatoes, ground Turkey, fennel, broth, fennel, basil, oregano, and salt/pepper to taste. Leftovers? Clearing out your fridge/freezer? Whip up an easy to make power bowl in no time at all! Bowl: Brown Basmati Green Leaf lettuce (shredded to motherfluffin perfection) ... Vegetable Medley (carrots, broccoli, cauliflower) Shredded ribs (frozen leftover instant pot ribs) Lime wedges Sauce: 4 tablespoons garlic hummus 2 Tablespoons BBQ sauce Pack into corner of ziplock bag and cut small hole in corner of bag. Pipe sauce over the meal. Feel free to add some water or fresh lemon juice to get a different consistency. Bowls like this one are one of the easiest ways to get a wide variety of nutrients into your diet. Pack those bowls full of color! Leftover ginger and turmeric carrot soup. On the side we have whole grain toast with cucumber and tempeh. Washed down with a chilled blueberry banana smoothie. Oven baked sweet potato fries! 1 medium sized sweet potato Drizzle of coconut oil or olive oil 1/8 tsp Salt 1/8 tsp Pepper 1/8 tsp Garlic Powder 1/8 tsp Paprika or 1/8 tsp Basil ... Peel potato or scrub well if keeping skin on. Chop into 1/4-1/2" sticks. Line a pan with parchment paper, drizzle with your choice of oil and sprinkle with seasoning. Fire them in the oven @450 for 30 mins or until crispy; flip halfway through! Don't settle for frozen when you can whip up something fresh just as fast! See more

I had some left over whole grain elbow macaroni from last night's Vegan Mac & "Cheese", so I decided to make a quick cold pesto salad for lunch today. - 1/4 avocado - 1 Tbs Extra virgin olive oil - 2 Tsp lemon juice ... - small handful fresh basil - 1 1/2 cloves garlic - 2 Tbs pine nuts (you can also use cashews or walnuts) - Salt and pepper to taste Pulse in blender until incorporated. Add to cooked pasta and BOOM, flavour city. Feel free to increase or decrease the amount of each ingredient depending on your taste preferences! Stay safe out there, you beautiful humans!
