Today is the Hottest day of the season In the Easter part of Mediterranean this cold soup is very popular Super easy to make and believe me it is so good, try it at home, you can skip the walnuts if you want. For 4 servings 1 cucumber (one third diced for the garnish, rest peeled, halved, seeds removed and chopped)... 3 cups yogurt cup milk lemon juice (from one lemon) 2 tablespoons fresh dill (chopped) 2 garlic cloves 2 tablespoons olive oil cup walnut (chopped) Optional) chopped dill (to garnish) Preparation steps 1 Place the cucumber in a mixing bowl and add the yogurt, milk, lemon juice, dill, garlic and olive oil and puree finely. 2 Season with salt, cayenne pepper and ground black pepper and let the soup chill for approx. 30 mins. 3 Serve the soup in small bowls garnished with the diced cucumber, walnuts and dill.
