Here are my top 3 egg substitutes I use in baking. .1. baking soda and baking powder - usually recipes just need that little leavening oomf that eggs provide and the liquid ingredients in the recipe act as the binding agent .2. flax egg - mix 1 tablespoon of ground flax seed with 3 tablespoons of water (I use @westpointnaturals flax seed meal!) .3. aquafaba - you know that gooey liquid when you drain out a can of chickpeas? well that's my liquid gold! Whip it up fast and it ...turns into meringue, brush it on things and it turns things golden brown. . On weekends we have special croissants of the day! The creme brulee is my favourite! The contrast of the cream texture with the crunchy exterior is un-real. Creme brulee is traditionally made with eggs, while this creme brulee is made with oat milk! Did you know that regardless as to whether they are free range or cage-free, there's so many problems about the egg industry? Beaks of newly born chicks are burned off without an anesthesia, male chicks are ground up alive or thro...wn in the trash because they are useless, hens are pumped with antibiotics and hormones and live in cramped dark sheds. Not only that, the consumption of eggs can increase your risk of cardiovascular disease and eating eggs is just super weird. I've been busy working on some recipe development lately. I've always been intrigued with french desserts, such as mousses! A free-standing mousse cake seemed impossible to veganize! This is prototype #1 of the chocolate mousse entremet with a pink mirror glaze! I'm excited to share it with you as soon as I've perfected it!
