Happy New Year! A new year is like a celestial birthday right? I made these birthday cake chocolate chip cookies yesterday because one of my goals this year is to do more things that bring me joy without overthinking all the timing & posting nonsense. So I baked these last night after going for a run, took the photo under my kitchen stove lights (after eating four of them of course) & now I'm sharing the photo evidence so perhaps their colourful deliciousness will bring a... little joy to your day as well. Happy International Tea Day! To celebrate the deliciousness & versatility of teas from around the world, I'm excited to be hosting today's #teadaybakes collaboration with my fellow match lover, Lindsey @il_dolce_by_lindsey Since I was short on time, as usual & heard that today is also #nationalcupcakeday & Mandy's birthday from @bakingwithblondie, it seemed only fitting to adapt one of her foolproof recipes. ... In the spirit of this collab, which challenged bakers to infuse their bakes with tea, I subbed out the buttermilk from this simple @cakeconfidence yellow cake recipe with strongly prepared matcha green tea. While I did add a decent amount of matcha, I admit I had to cheat to obtain this especially grinchy green The matcha paired beautifully with the natural creamy sweetness of yellow cake, & these addictively light, airy cupcakes were topped with a whipped white & ruby chocolate ganache I had planned on adding a decorative earl grey infused shortbread cookie to the larger cupcakes, but alas, between being swamped with work & rushing to get everything done, this was all I could manage. Ruby chocolate hot cocoa bomb Happy #NationalCocoaDay! So, as an avid hot chocolate lover, naturally I had to hop on the crazy hot cocoa bomb train. I actually had this sort of idea after seeing desserts decorated with chocolate spheres, but tiktok definitely did a better job popularizing it than me & my little following ever could ... My take on these festive cocoa bombs feature a few unique chocolate flavours, so first up: Ruby Chocolate. Omg, so good. Crafted from the Ruby cocoa bean, it's naturally red with a hint of fruitiness - no added colours or flavours. Filled with a mix of milk & white chocolate powders, & loaded with mini marshmallows. But then, after rewatching my first finished video with pride... it was Gone. Gone. The hours I spent erased. I went from pride to devastated disbelief in seconds. I screamed, I cried, part of my soul had died. My cat ran downstairs. Too late for a #pumpkincookie post? Better late than never? Since I posted a collection of cookies on candy day last month, I couldn't let #nationalcookieday go by without a post ... I feel like this past month (year really) has flown by & yet I don't know where the time went. Lots seems to have changed over here in Insta posting land.. and I'm not a fan ... After initially logging on to a message about my account being locked, it took several text codes & log in attempts before I could access it.. and then, after finding the new post button, the caption for this post didn't want to happen. This is now the Second time I'm typing all this out, while not being able to see what I'm typing in edit mode (wtf, why!? Idk), because I wanted to 'technically' have this post up on #cookieday December 4th, but hadn't finished the text before midnight. Anyway, in the spirit of this post's tardiness, I have to admit I meant to share this as part of the #appreciationbakecollab hosted by @macaronsbymo, @twystedsifter, and @jennpennbakes. I absolutely loved the idea behind that collab & was excited to share these cookies because they were a bit of a new experiment for me (that I think turned out really well), & I shared them as part of the Halloween cookie/muffin boxes I put together for a few special friends & family members. Just my little way of showing my appreciation for their presence in my life, even though we don't always manage to keep in contact, especially these days. I'm grateful for those in my relatively small circle, as well as everyone who follows along with my baking creations. I appreciate you so so much, thank you for being here. I can't promise I'll manage to stay on top of everything I feel I've got to do in a day, but I will try to be a little more present & consistent. #2021 The main recipe for these #pumpkinsnickerdoodles came from @handletheheat, but I put my own spin on them by sandwiching them with a little sweetened & spiced cream cheese I also made cookies today (peanutbutter pumpkin chocolate chip cookies, recipe of my own creation) - they also came out pretty damn tasty, we'll see if I manage to photograph them tomorrow

November 4th, 2020: #nationalcandyday & #nationalstressawarenessday .. appropriate given the current social climate & associated stress levels among most people these days. If covid, racism, & civil unrest weren't enough to keep you on edge, how 'bout a high stakes, disturbingly close election? Before we can *hopefully* breathe that sigh of relief, let's feed our stress with some candy shall we? So...despite knowing it was election day in the US, I spent most of yesterday ...thinking it was Wednesday the 4th.. hence my previous candy-ish posts. But when I checked the hashtag for the #nationalcandydaycollab before bed, I was confused to see so few posts, & then realised.. it was Tuesday, the 3rd. #oups Apologies to the fabulous hosts: @sprinkledsamantha & @bakingbymiriam for the early tag notifications highlighting my date obliviousness. To acknowledge my mistake, I figured I'd share another delicious @reeses pieces creation: peanut butter chocolate chip cookies. Very loosely based on the cake mix chocolate chip cookies from @sallysbakeblog, this recipe was my own rough creation from combining what I felt were appropriate amounts of certain key ingredients. I think they turned out pretty great. While I still wouldn't expect a handful of Reese's pieces if you offered me "candy," I think Reeses are somewhat closer to the candy family than chocolate.
