Glowing Skin Green Smoothie 1c Spinach 1/2 Banana 1 Pear 1 Orange... 1/2c Pineapple 1tsp Unsweetened Coconut 1c Water 1 Scoop of Protein Poweder of Choice Blend thoroughly, add more liquid if necessary or use other liquid of choice like Oat Milk. I also added some @organikahealth 'Plant Based Marine Collagen' for an extra boost. Among other nutrients, this smoothie has Vitamin C, Zinc and many Phytonutrients like Flavanoids which have anti-oxidant, anti-inflammatory and tissue supporting properties. Easy & Delicious Maple Balsamic Roasted Brussel Sprouts This side dish is super easy, but delish. Brussel Sprouts have Vitamins A and C, Folic Acid, Fiber, Calcium, Sulfer, Phosphorus, Magnesium, Iron and Protein. They are also high in several phytonutrients with so many beneficial properties:... anti-inflammatory immune stimulating antibiotic properties cancer prevention These little nutrient powerhouses are not known for being a favorite vegetable. But, with these simple flavors have won over friends and family who hate all vegetables.....there's at least one in every group! Ingredients 2 cups of Brussel Sprouts 1Tsp Olive Oil 1Tbsp Balsamic Vingear Dash of salt and Pepper Optional: 1tsp pure maple syrup Chopped Pecans 1/2 Red Onion Sliced ~Preheat oven to 350F ~Halve Brussel Sprouts, add to a bowl ~Add oil and vinegar to the bowl and coat brussel sprouts (add onion at this step if desired) ~Lay on a pan cut side down and sprinkle a dash of salt and pepper ~Cook for 30 minutes or until desired crispiness **Add pecans or other nuts and drizzle maple syrup for last 5 minutes of cooking

Quick and Easy Peanut Soba Noodle Bowl This is a meal on my regular rotation, inspired by @cheaplazyvegan. Despite soba noodles being made of buckwheat they are actually gluten free (read your labels). Buckwheat is actually NOT related to the wheat family. It contains Protein, Fiber, B Vitamins, Potassium and some Iron, Calcium, Manganese and Phosphorous.... Add all the beneficial nutrients from your veggies and you've got a quick, healthy, delicious meal! I like add a little bit of Vegan Kimchi for a bit of spice and probiotics to maintain a healthy gut.
