Rice Bowl~ Family Style Veggie Rice Bowl - An easy, healthy meal the whole family can get in on! Loaded with all sorts of veggies. Feel free to add whatever else you like! INGREDIENTS: Rice (I like brown, forbidden, jasmine, basmati) 2 cups butternut squash cubed... 1 yellow onion, largely sliced 1 T extra virgin olive oil Pinch of himalayan salt/pepper 4~ garlic cloves 1 bag of frozen mixed asian veggies (or any frozen veggies of choice) 1 T coconut oil 1-2 avocado, sliced Tamari sauce DIRECTIONS: Preheat oven to 400F and line baking sheet with parchment paper. Place cubed butternut squash, onion, and garlic on baking sheet. Drizzle with extra virgin olive oil, salt/pepper, and roast for 25 minutes or until tender. While that's roasting make your rice. When your rice is done fluff with a fork and place in large bowl. Prepare bag of frozen veggies. Depending on which veggies you use, cook them according to package instructions. You may steam them, bake or roast them, or put them in a fry pan with coconut oil and let them cook on medium heat for 5-6 minutes. Which is what I did with the frozen bag of veggies I had. Once all your veggies are done pour them into the large bowl with rice. Add avocado, tamari sauce, any extra seasonings you prefer and dig in. Enjoy! One of my favorites! I have made this several times and love how easy and delicious it is. You can add cubed salmon or chicken if you don’t like shrimp. Sinfully good! 10-MINUTE LEMON GARLIC BUTTER SHRIMP WITH ZUCCHINI NOODLES Lemon Garlic Butter Shrimp with Zucchini Noodles SO GOOD! This dish is low carb, paleo, keto, and gluten-free so you can enjoy for a light lunch or dinner.... INGREDIENTS:: -1 pound (450g) raw medium shrimp, peeled and deveined -4 medium zucchini -1 tablespoons olive oil -2 tablespoons unsalted softened butter, or ghee, divided (original recipe called for 4 tsp, but I found 2 is plenty) -4 garlic cloves, finely chopped -1 teaspoon Italian seasoning -Pinch of red pepper flakes -Juice of 1/2 fresh lemon -1/4 cup (60ml) chicken or vegetable stock (or white wine) -Hot sauce of your choice, to taste -Salt and fresh cracked pepper, to taste -1/4 cup chopped fresh parsley, for garnish DIRECTIONS:: 1. Wash and trim the ends of the zucchini. Make the zucchini pasta using a spiralizer or julienne peeler and set aside. **Tip: You can also purchase pre-spiralized zucchini pasta at your local grocery store. 2. Heat 1 tablespoon oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the shrimp in one layer and sprinkle with salt and pepper. Cook for one minute without stirring, so the bottom of the shrimps get slightly browned. 3. Add the chopped garlic, Italian seasoning, and red pepper flakes and then stir the shrimp for another minute or two to cook the other side. Transfer the shrimp to a shallow plate. 4. In the same pan, add remaining butter, lemon juice, chicken or vegetable stock, and hot sauce to the pan. Bring the sauce to a simmer for 2-3 minutes, stirring regularly. 5. Stir in the zucchini noodles and cook until done, about 2 minutes, stirring regularly. Allow the sauce to reduce a bit if it’s too watery. Add the shrimp back to the pan and stir for another minute. Serve immediately with lemon slices, extra parsley, and pepper. Enjoy! #healthyeating #healthyliving
HEALTHY TUNA STUFFED AVOCADO These avocados are stuffed with a flavorful southwest mixture of tuna, bell pepper, jalapeno, and cilantro. No mayo necessary here! This is an easy, tasty lunch, snack, or even dinner. Ingredients... 4 avocados, halved and pitted 3 (4.5 oz) cans tuna, drained 1 red bell pepper, diced 1 jalapeno, minced 1 cup cilantro leaves, roughly chopped 1 lime, juiced salt and pepper Directions Scoop out some of the avocado from the pitted area to widen the "bowl" area. Place the scooped avocado into a medium-size mixing bowl. Mash it with a fork. Add the tuna, bell pepper, jalapeno, and cilantro to the mixing bowl. Pour lime juice over. Stir together until everything is well mixed. Scoop the tuna into the avocado bowls. Season with salt and pepper. Serves 4 to 8 #avocado #healthylifestyle #healthyeating

WATERMELON BANANA SORBET (makes 2 servings) 1 cup (155 grams) cubed watermelon 1 large banana, cut into chunks and frozen tsp fresh lime juice Place all the ingredients in a high-speed blender or food processor and pulse until smooth.
