A new #BetterThanTakeout recipe for your stay home weekend: Baked Bean & Beef Taquitos. Baked Bean & Beef Taquitos 2 tsp oil, divided 12 lb (225 g) lean groun...d beef 1 can (14 oz/398 ml) unsalted black beans 2 tbsp water 12 tbsp Guacamole Dip Mix 23 cup grated cheese, your choice 8 small flour tortillas Toppings (optional): Guacamole, diced tomatoes, sour cream, cilantro, sliced red onions Preparation Preheat oven to 425 F. Line Sheet Pan with Sheet Pan Liner. Heat 1 tsp oil in Wok over medium-high heat. Crumble in beef; cook 34 min, until browned and cooked through. Meanwhile, drain and rinse beans; add beans, water, and dip mix to wok. Using Ground Meat Separator, break up chunks of meat and coarsely mash beans. Cook until beans heat through, about 12 min. To assemble, add divide beef and bean mixture and cheese between tortillas. Tightly roll, leaving ends open. Place on pan. Brush tops with remaining oil, using more as needed. Bake until the outside is golden-brown and crisp, about 68 min. Serve with toppings, if desired. Perfectly Balance Your Plate Serve with 1 cup sliced veggies, your choice
Thai Coconut soup on the menu tonight. I loaded it up with kale, mushrooms, red peppers and chicken. I may add shrimp if you know who doesn't want any! Grab it cause it's going and you never can be quite sure if it will come back! I hope it's a keeper cause it is way to eady to make and so good....not to mention cheaper!

Not quite sure what to do with Thai Coconut Soup mix. Why not try this? THAI COCONUT CHICKEN Mix the package of thai coconut with 1 can of coconut milk & 1/2 juice of 1 lime ~ pour it over chicken thighs, mix it and let it marinade in the fridge for a few hours ~ bake at 425 for 25 mins (next time would like to try it grilled)... ~ served over steamed basmati rice ~ steamed green beans with herbed garlic sea salt *If you try this you may not need to use the whole package, depends how much chicken you are making. This was done with a full pack of chicken. See more
