Alkaline Carrot Muffins 200 g MorgenStund’ (uncooked) 375 ml water... 100 g liquid honey 1 Egg yolk 1 Egg white 50 g butter, melted 50 g ground nuts, almonds 130 g spelt/kamut/einkorn wholegrain flour or a Gluten Free option 2 Tsp baking soda 80 g grated carrots Beat the egg white until stiff and keep aside to use later. Stir the honey, egg yolk, and butter until foamy. Add MorgenStund’, nuts, water and grated carrots, mix well. Briefly stir the flour mixed with baking soda. Finally stir in the beaten stiff egg white. Put the batter into muffin cups. This amount makes about 20 mini muffins.
