Well be closed until January 5th, so instead of carbs here’s a picture of an adorable puppy. I think you’re great.
We’re closed until January 5th for some much needed relaxation. It does, however, seem like a good moment to highlight this woman. @eva_mcm and her husband @kyle_mchowe take nearly all of the photos that you see here. What I love about their photos is that they don’t just capture what we do, but how it feels to be in (or outside of!) our little shop. We met years ago, when I made their wedding cake, and struck up a friendship that’s really stuck. I’m very info friendships that begin over carbs.
We’re off until January 5th, for some rest and relaxation. So here’s a picture of an insanely cute puppy to fill your heart.
Thank you. Thank you to everyone who waited in line on the 24th for their sweets and loaves. At one point that line was an hour and a half long, and I didn’t hear anyone complaining. Thank you to the people who gave us handwritten cards about how our little cafe made this year feel safer, I cried reading each and every one. Thank you to those who brought our staff bottles of wine, and cookies. Thank you to all of you who sent me sweet messages this week, or gave us smiles wh...ile we were hustling along, or placed online orders and helped us get through this terrifying time. You are all nothing short of magical, and I could never put into words how much it means to Jordan and I. And thank you to our brilliant, kind, adaptable team for making this Christmas such a good one. They’ve worked so very hard. We’re going to rest for a minute now- we’ll be back open on January 5th. Tomorrow is going to be crazy, y’all! We made heaps of loaves today (all fermenting in the fridge until the wee hours) and shaped piles of danishes, and WE ARE READY! We won’t have any sit down service, but you can grab a breakfast sandwich to-go, along with your coffee. Well be handing out free hot chocolates and mulled wines, and it should be pretty fun. Come hang out, buy a loaf (or two! A sea of bread bums. Our loaves take a long time to make- the starter is mixed around midnight, and the breads begin getting mixed around 5am each day. Then they are out into containers (with the help of a pulley- that dough is heavy!) folded every 30 minutes or so, weighed by hand, pre-shaped, then shaped again. Then each loaf sits and ferments and proofs in the fridge for 12 ish hours. It’s this long process that breaks down complex proteins into easily digestible ones, tur...ns the starches into sugars that caramelize so beautifully in the ovens, and most importantly why it tastes so damn good. Corners aren’t cut anywhere, it’s deeply a labour of love. This time last year I could never have imagined all that would be thrown at us over 12 months. I could never have dreamed we’d not be letting people inside our doors, that we’d be spending so much on covering and heating patios (coming next week!) Or that our future would feel so uncertain. I do know, however, that even that sweet naive fool from last year knew how much our community would be here for us. This year has rocked me to my core, but all of you who line up, sit in the rain, but our loaves, drink our coffee, wrote handwritten notes, brought our staff flowers, bought us a tree when ours was stolen- you. You did all of that, and never let me forget that even through all the craziness, we were loved and supported. I love the heck out of all of you, and I’m so thankful. Happy thanksgiving, y’all.
One of my most favourite things in the world right now is this fusilli. It’s full of slow cooked zucchini, heaps of saffron, white wine, and enough butter for it to feel creamy but not so much that it feels heavy.
