DIETITIAN’S CORNER! Have you ever tried pitaya, otherwise known as dragonfruit? It is such a unique looking fruit, but a delicious way to get in some vitamin C and fibre into your diet! When buying a dragonfruit, try to look for one with very bright coloured skin, with few blemishes. A ripe dragonfruit will have a bit of softness and will yield when you put a bit of pressure. You can leave dragonfruit in room temperature for a few days to let it ripen, or you can leave it in ...your fridge to keep it fresh for longer. Once you have cut open the dragonfruit, be sure to seal it in a tight container and put it in the fridge. When you are ready to eat your dragonfruit, simply cut the fruit in half and you can eat it similar to how you eat a kiwi simply scoop up the flesh with a spoon!
