My first sourdough with whole grain flour; 25%stone ground spelt, 75% all purpose. A bit of a loose messy start but with some time and careful gentle tending it made a decent loaf. A bit chewy inside and a bit flat. Now I need to get some proper hard wheat bread flour, local and organic of course!
