We asked Artisan vendor, Katerina Klimes, to tell us about herself and her business. Here's what she had to say: I am a Confident Chameleon! I was born in Prague, under the communist hammer. At the age of 7 we took a holiday, and escaped under the watchful eye of semi-automatics over the Yugoslavian border. We spent a few months in a true refugee camp, and a year and a half in refugee housing. We learned German and started anew. I saw my father after 2 years, when he was re...leased by the communists. We got into Canada because my amazing Babi sponsored us in 1984: we started anew again. We spent the next few years being dirt poor, while my parents learned the language... Here's a simple Carrot Coconut Soup Recipe to help keep you warm! Perfect comfort food for the times! 2 tbsp coconut oil 3 tbsp fresh minced ginger... 4 cups vegetable broth 10 medium carrots, peeled and chopped 1 can (16) oz coconut milk fresh cilantro Heat oil in a large saucepan over medium heat. Add ginger and sauté for 2 minutes. Add vegetable broth and carrots. Cook over medium heat until carrots are tender. Add coconut milk. Puree all ingredients in a blender until smooth.
