Masala Idli with coconut chutney and Indian tea (my favorite chai ) Masala Idli is the best way to use your leftover idlis or I would say make more Idlis so that you can use leftovers to make masala Idli version. Alternatively you can use fresh Idlis as well if you don't have leftovers. Ingredients (3-4 people): 18-20 leftover idlis cut into 4 or 6 parts as per your choice,boil 1.5 tbsp, cumin, 8-10 curry leaves, 2 tsp ginger garlic green chilies paste, 2 medium size onion ...finely chopped, 2 medium size tomatoes finely chopped, half green bell pepper finely chopped, half lemon, 2 tbsp podi masala, 1/2 tsp turmeric powder, salt to taste, coriander for garnishing. Recipe: In a large pan, take oil, once hot, add cumin seeds, curry leaves it should be medium. Then add ginger garlic and green chilies paste and onion and saute well for 3-4 minutes or until onion turns translucent. Then add green bell pepper saute for a minute and also add finely chopped tomatoes. Cook for 3-5 minutes until tomatoes turn mushy and release oil. Then add salt to taste, turmeric powder, podi masala and Idli pieces. Mix everything well so that masala can coat idlis properly. Don't cook much, just you feel your idlis turned enough hot (like 2-3 mins) turn off the heat. Squeeze half lemon and garnish with freshly chopped coriander. Aloo sabji, Puri, Amul Shrikhand and fried papad in Saturday dinner Looks complex but easiest and quickest meal you can make in brunch or dinner. Already tried couple of times and now seems addictive already Recipe (2-3 people): Take 5 medium size potatoes, peel and chop in medium size pieces. Take 2 small tomatoes and chop small pieces. Make paste of ginger (1.5 inch) and 4 spicy green chilies. Take a pressure cooker, on medium heat, add 2 tbsp of mustard or any oil, ...once hot add 1 tsp cumin, 1 tsp fenugreek seeds, 8-10 curry leaves, pinch of asafoetida, 1/2 tsp fennel seeds, 1/4 tsp carom seeds (optional, alternatively you can add them in Puri), mix well and enjoy the aromatic tempering. After a few seconds add ginger and green chili paste, and 1.5 tsp coriander powder, 1.5 tsp Kashmiri red chili powder (less spicy just for color), and 1 tsp turmeric powder mix well and immediately add chopped tomatoes so that the spicies will not burn. After 3-4 mins when oil separates from tomatoes, add chopped potatoes. Add salt to taste and add around 2 cups of water or till your level of vegetables in the cooker. Adjust salt and spicies and cover the lid. Give 2 whistles and wait till pressure releases naturally. Garnish with freshly chopped coriander. Mashroom Pulao and cucumber Raita for dinner today #thalibyzankhana There only 2 ways I eat mashroom. First one is in pizza and second one is in Pulao. Ever since I started making mashroom Pulao, this one is my go to recipe when I have mashroom in my refrigerator. This is very easy and quick recipe with full of nutritions. Ingredients: 2 tbsp Ghee (clarified butter), 1 tbsp cooking oil, 5 spicy green chilies chopped, 2 tbsp ginger garlic paste, 15 cashews (approx), ts...p hing (asafoetida), 8-10 Curry leaves Whole species: 1 tsp Cumin, 1 small cinnamon stick, 5-6 cloves, 1 black cardamom (bigger one), 1 star anise, 8-10 whole coriander seeds, 8-10 whole black pepper Vegetables: 2 medium size onion thinly sliced, 250 gram of mashroom, 1 big carrot chopped in small slice, 1/2 cup french beans, 1/2 cup frozen green peas 1 big Potato (I haven't added in this but you can) Salt to taste, 1 tbsp coriander powder 1 tbsp garam masala (or Pulao/biryani masala also gives best result), 1.5 cup rice, 2.5 cup water (adjustable according to rice quality), Mint and coriander leaves finely chopped for garnishing, 1/4 lemon. Recipe: First shallow fry cashews in a cooker with a tsp of oil for 2 minutes and put it aside. In a big Cooker, once hot, add ghee and oil. Once it gets hot add all whole spicies listed in ingredients mix well and cook for half minute, don't let it burn. Then add hing(asafoetida), curry leaves, ginger garlic paste and green chilies. Mix and again cook for half a minute and then add onion and saute for 3-4 minutes until lightly brown then add all veggies and a half quantity of salt from total requirements. Add coriander powder and garam masala and mix with vegetables cook for 3-4 minutes. Add rice and mix, let rice cook for around 2-3 minutes without water so that masala can coat very well on it, then add rice. Add rest of salt as required. Now add squeeze of lemon it'll prevent rice from sticking each other. Cover the cooker and let it cook for one whistle. The crunch I experienced while eating it was so worthy Recipe for 2 (four sandwiches): To make aloo filling, Boil and mash 3 medium Aloo (Potato). In a pan, add some oil, 1/2 tsp cumin seeds, finely chopped one medium size onion, 1 tbsp ginger garlic and green chili paste and saute well ...for 3-4 mins until translucent. Now add spices like turmeric powder 1/2 tsp, cumin and coriander powder 1 tsp, red chili powder 1/2 tsp, salt to taste. Adjust spicies according to your choice. Squeeze half lemon and add some coriander. Mix well and put it aside. Coriander chutney: In a mixing jar, take handful of coriander, 2 tbsp of peanuts or roasted bengal gram, half inch ginger, 2 green chili, squeeze of lemon, salt, 1 tsp of cumin seeds and blend. Making: Spread chutney on single side of 2 bread, add potato filling, a cheese slice and cover with another bread. Spread butter on on both outer sides and grill it till desired level. It's a favorite travel food for all gujaratis over the world including me Bataka ni Suki bhaji (Dry potato sabji) is a perfect combination to go with thepla. Thi...s sabji is highly popular in Indian religious fasting days. Every family has its own version. I'll share mine. Recipe for 2: Take 3 medium size potatoes and boiled it with some salt hear 3-4 whistles of pressure cooker. After it got cool down remove skin and cut in small pieces as per picture. In a wide pan or kadhai and put it on medium heat. Take 2 tbsp of oil, after oil gets hot, add 1/2 tsp cumin seeds, 1/2 tsp mustard seeds, pinch of asafoetida, 1 tsp sesame seeds, 8-10 curry leaves, paste of 1 inch ginger and 4-5 green chilies and mix everything well and saute for half minute. Now add boiled and chopped potatoes, 1/2 tsp turmeric powder, 1 tsp cumin coriander powder and 3 tbsp of coarsely crushed peanuts and mix well. Add some salt as per needed and squeeze half lemon at the end. Healthy version of white sauce pasta. The reasons behind the word healthy are, 1. The pasta is made up from red and white quinoa, rice flour. 2. I used almost more amount amount veggies than pasta. #thalibyzankhana (Gujarati thali in the house) In thali: fruit custurd (middle), (clockwise) Aloo gobi dhaba style, Papad, grapes pickle, Shahi Pulao, mini samosa, fulka roti, Gujarati kadhi. Last week some friends came over, and I decided to make a good thali as I was also craving for some good thali. My new inventory that day was grapes pickle. My mom used to make it I didn't had it once I left home. So before fresh summer grapes go away I decided to give it a hit. I called... my mom and she gave me below recipe. Grapes pickle: 3 things you need are grapes (green or red), aachar masala or sambhar methiya masala, peanut oil. I'm giving approx measurements here. Take 1/3 cup of oil (yes oil is always more in the pickle) and make it lukewarm. In a bowl take around 400 grams of grapes, add around 1/4 cup methiya masala. Pour lukewarm oil over and mix. You can make it instant also. But the taste enhance in a day or two. Ideally you can have it till a week once you make it and keep it in a fridge. Pulao kadhi I'm making it a lot nowadays. It's my go-to. I'm share recipe soon. Fruit custurd (fruit salad) and dhaba style aloo gobi's recipe is already in the feed. Roasted paneer (cottage cheese) and corn salad #saladbyzankhana Craving something delicious and healthy today for the dinner and had Malai paneer in the fridge so thought let's make some chatpata salad today which is equally delicious as chat. Recipe (there is no proportion here, you make take quantity on your wish): Boil corn kernels. I used frozen one which are already boiled. I just thaw it with hot water. I cut paneer (cottage cheese) into medium size cubes or desire...d length. Took well seasoned cast iron skillet and spread some olive oil on it and throw paneer onto it and roast paneer on low heat. After brown spots appeared I turn off the heat. Take a bowl, add corn kernels, chopped onion, tomato, green bell peppers mix well. Add paneer after it gets a bit cold. Add spices like salt, pepper, chat masala. Also add some extra virgin olive oil for best taste. Multigrain bread toast with nut and seed butter topped with banana accompanying with black coffee in today's morning breakfast. Being an Indian, I habituated with a tea which has lots of sugar. Gradually, I started reducing sugar in my food from a year now. It doesn't mean I'm totally avoiding it but I take in very less amount where it's necessary i.e. sweets. Because from natural resources we're getting lots of sugar (e.g. fruits) that there is less need to consume it s...eparately. So when you see cup of Indian tea with my breakfast plate remember that it's a no sugar tea. There is no need to tell disadvantages of sugar here. You may find it on internet. Nut and seed butter I got from Costco this time, I found it very healthy. And I like the combination of black coffee with it. Hara bhara kabab . The best and amazing vegetarian starter well famous in India. All the ingredients all healthy except deep fried version. But you can make it shallow fry or air fry to make it healthy. Yes it definitely takes some time to prepare but it's worth trying. Let's checkout the recipe. This recipe will make around 15-16 kabab of the size given in picture. Recipe: Roast 3 tbsp of chickpea flour for 4-5 mins and put it aside. Take 2 medium size potato and put it i...n pressure cooker to boil with some salt. In a pan, take 2 tbsp of oil on medium heat, add 3-4 spicy green chilies, half inch ginger. Add 1 chopped green bell pepper, 1/2 cup French beans and 1/2 cup green peas. Saute everything well for 2 mins and then add 150 grams of spinach, mix well and cover for 2 mins. Spinach will mix well and reduce the size. Now add 1 tsp salt, 1 tsp turmeric powder, 1 tsp chat masala. Mix and turn off the heat. Let it cool and then make a coarse paste. Take a big plate or bowl, add the green paste, 2 boiled and mashed potatoes, 100 grams of crumbled paneer, 3 tbsp of roasted chickpea flour (besan), 3-4 tbsp of bread crumbs and mix well. Add remaining spices like 1/2 tsp of black salt, 1 tsp aamchur powder, 1 tsp garam masala, 1 tsp coriander powder and mix everything and adjust salt. Your kabab material is ready. You may add more bread crumbs or poha if your kabab is not get together. Take a handful of mixture and smooth everything and press a little bit gently and take half cashew nut and press it in between. Now coat it with bread crumbs. Prepare all kababs like this. In a deep pan, prepare oil to fry and heat should be medium to high. Fry all kababs one by one and handle gently otherwise it may get broken. Makai no lilo chevdo (corn chivda) is a famous Gujarati breakfast or snack option which is very healthy and tasty. Recipe for 2 people: Take 5-6 big American sweet corn and grate it. If you don't have sweet corn and you have corn kernels then you can use it by crushing it into the mixture. In a large pan (kadhai) take 2 tbsp of oil, and put it on medium heat. Once oil gets hot, add 1/2 tsp mastuard seeds, 1 tsp seasme seeds, 3-4 cloves, 1 pinch of asafoetida, 1 stem of curr...y leaves and saute everything well. Now add grated corn in it. Now stir continuously for around 10 mins on medium heat. You can cover 1-2 mins in between.
