hi lovelies! . we’ve gone from flirting with to full vegan for the last while and we are loving #plantbasedlife . While developing vegan recipes (especially bakes) has posed a few challenges, I’ve gotten into the swing of things and have learned the following: 1. Coconut milk is your friend . Stew anything in coconut milk and ginger and it will be delicious.... 2. Quinoa is also your bestie, put anything in a quinoa salad and you have a healthy, delicious dinner in under an hour. 3. Nutritional yeast is actually the healthiest, most interesting ingredient ever. Add it to your homemade pesto and it tastes like parm, sprinkle it into your matcha protein balls and you now have matcha cheesecake protein balls (YUM). 4. When it comes to baking, bananas and nut butters are life savers, they act as better-for-you egg+butter replacements while adding moisture and flavour. Take it from me, this vegan, spiced banana+coconut cake sweetened with maple syrup and tinged with peanut butter made my coffee break that much sweeter and is the perfect guiltless midday snack . . ps: no I’m not cheating, it’s maple syrup in the honey pot .
