Luna Yoga + Barre 03.05.2021

NATURE’S CANDY I love eating a big serving of organic fruit in the AM. It gives me a healthy boost of energy to help get my day going. Fruit is low in fat, high in fibre, and full of vitamins, minerals, and antioxidants. Yes, fruit is high in natural sugars - so it’s a great substitute for other high calorie sugary treats when wanting something sweet. I would eat fruit rather than a chocolate bar (or even an energy or protein bar) any day of the week. My current mix is: strawberries, mangoes, and blueberries topped with a little unsweetened coconut and freshly squeezed lime. It’s so refreshing and yummy! Adding a bit of mint to this would be delicious, too.

VEGAN LEMON BUTTERCREAM FROSTING (save for later!) I spent HOURS in the kitchen yesterday trying to perfect a gluten + dairy free zucchini blueberry cupcake...it didn’t happen. My little cakes kept turning out flat and mushy . I decided to take a break from making them and turned my focus over to the most important part of any cupcake - the frosting! It turned out so, so, so yummy! Thank goodness...because I was getting hella frustrated. I ended up baking gluten free vani...lla cupcakes so that I had a reason to use the frosting . If you’re looking for a delicious, subtly sweet, vegan buttercream frosting for your cakes - read below! INGREDIENTS: 1 stick of @miyokoscreamery European style cultured vegan butter 1 tsp pure vanilla extract 1 lemon (juice + peel) 1/3 cup powdered sugar HOW TO: Take softened butter and add to bowl. With your stand mixer, beat on medium for 1 minute. Add vanilla, finely grated lemon peel, and lemon juice and beat again for 1 minute. Slowly sift icing sugar in and beat until combined. Add frosting to piping bag and start decorating! Be sure to use this frosting as soon as it’s made or it will melt. Once I finished frosting my cupcakes I stored them in the fridge to keep the icing firm. Happy long weekend!!

Luna Yoga + Barre 11.04.2021

The last two days have been so strange (peep my stories if you want to see what’s been going on...it’s like, realllly weird ). But...it’s time to move on from that! I’m pretty excited today. I got my YTT certificate and I am now a certified Gravity Yoga instructor! Gravity Yoga is a mat based, targeted mobility training method that helps students with stiff backs, locked up hips, and tight hamstrings. It’s the perfect class for inflexible yogis like me! I’m going to start sharing a bit more about GY throughout the coming weeks...and if anyone is interested in booking a discovery call/zoom class with me - please do not hesitate to reach out!
