We need answers
Morels are pretty much exclusively wild foraged because of super specific growing conditions and symbiotic relationships that we haven’t been able to recreate on a farm setting. While morels are most abundant in the spring, we’re lucky enough to have dried morels from Forbes Wild Foods for when the inspiration strikes! Some folks actually swear by dried morels, saying the dehydration process concentrated their flavours.
These greens are here (and still growing) because of you! It might seem too good to be true, but your basket subscription in support of the local food system really did help to put up this caterpillar tunnel at @lunar.rhythm.gardens to extend her growing season! We’re pretty big farm lovers around here, and your support made our farm loan program not just a possibility, but an ongoing opportunity for our farmers invest back into their farms. It’s an interest free loan that’s... usually repaid with fresh veggies (pretty sweet deal if you ask us!), but Jess preferred that we pay half cash half veg credit so she can maintain her cash flow to keep folks employed over the winter. It’s really farmer’s choice! Jess installed a couple of caterpillar tunnels on her farm back in October (one of them covered by the farm loan!) and while the first year is sort of an experiment to figure out what works best, she’s excited to grow some more local greens during the winter and some cucumbers and tomatoes in the summer! So, yeah, THANK YOU!!!!

Mushroom and Pesto Fettucine. We love pairing the bright freshness of nutrient-rich pea shoots with earthy and meaty mushrooms in this pasta dish. A combo of black oyster and shiitake mushrooms help support your immune system this time of the year, too, to make for a super comforting dish packed with lots of superfoods to be your best super you. To make simply:... Sautee the shitake and black king oyster mushrooms with the 2 tbsp of olive oil over high heat. Once seared add shallots and garlic, sautee for for 2 minutes until translucent. Turn off heat. Drop pasta into salted boiling water until al dente. Approx 2 minutes Add pasta and pesto to the pan and toss. Season if needed. Garnish with living pea shoots bit.ly/2MM6Aw1

How cool is this DIY Dried Orange Garland?! Heat oven to 250F. Line cookie sheet with silicone mat/parchment paper. Slice oranges crosswise 1/8 1/4 thick using a sharp serrated knife, and pat slices dry with paper towel or cloth. ... Place in a single layer on baking sheet and bake for roughly 2.5 hours. Flip the slices over after about 1.25 hours. After 2.5 hours in the oven, remove any slices beginning to brown, and slide the remaining slices back in oven until dried and very slightly browned. Once slices have cooled, use scissors to poke 2 holes about 1/2 apart on orange slices. Thread oranges onto twine. (It’s helpful to wrap the twine end with a piece of tape to prevent unraveling!). You can also make ornaments by cutting threading slices individually and tying your twine into a knot! Via: themerrythought.com

If you've ever had an unripe persimmon, it's a 'furry' experience you'll probably never forget. But, a perfectly ripe persimmon, is like nothing you've ever tasted before. It's kind of like a mango and sweet roasted bell pepper love child with a hint of cinnamony-ness. There are two main varieties, the fuyu and the hachiya.... Fuyus have a shorter name and are also shorter and more rounded in shape. Fuyu persimmons are sweet even when they're still slightly underripe. Hachiya's (longer name) are slightly longer, coming to a point at the bottom, and demand to be fully ripened (sometimes overripe) to enjoy the sweet and juicy experience. If you ever wondered what the heck to do with them (other than enjoying them fresh) check this out!

Well, the cold blast we had last week really pumped the brakes on some of the local greens. But, it’s the name of the game this time of year, because, even if you have access to a warmer greenhouse, the shorter daylight hours and overcast days really affect how fast the greens will grow. But, even if it’s not as fast and furious as it is in the heat of the local season, we’re still super grateful to still have access to local greens like arugula, lettuce mix and kale this time of the year! Say (goat) Cheese! This week's Partner Spotlight is...Cross Wind Farm! For as long as they both can remember, Kevin and Cindy had dreamt of starting a goat farm in Ontario. But not just any goat farm, it was the first one ever (in Ontario) and also the best and most progressive farm. They were committed to setting the bar high and putting the animals first for top-notch products with a freshness that can't be beaten.... In 2006 they started reconstructing an old barn in Keene, a year later in March 2007, their first goats arrived and they were selling milk within the month. Wild Chanterelle Mushrooms!!!!!!!! Wild foraged in BC, the winter variety is known as the Yellowfoot Chanterelle and has a darker brown cap with paler gills (they're more distinctively smokey and peppery and less fruity than Golden Chanterelles, too). A Chanterelle's best friends are butter and wine and they work best in simple dishes where their flavour is highlighted.... Local baby ginger is here!! Because ginger is a tropical plant that needs to be kept quite warm, it's near-impossible to grow mature ginger in Canada (it takes 12-18 months to develop it's thicker skin and deeper flavours). So, instead, we enjoy it early! When harvested around 6-7 months after planting, the skin hasn't developed yet, the texture is much more delicate (similar to that of garlic) and its flavour is milder, too! ... It does have a shorter shelf life which is why you won't find it in many grocery stores, so we're super grateful for our friends at Loco Fields for sharing this unique ginger experience!
Fire cider is amazing for digestion and immune support and it’s actually pretty easy to make if you’ve got some time. The recipe is super flexible to so even if you don’t have everything you need, you should still give it a try (we’ve got local fresh turmeric and ginger that would be perfect for this!). Welcome to the shoulder season friends! It's basically the time of year when plants are either going into or out of dormancy in the fields both in late fall and early spring. It can be a great opportunity for local farmers to extend their growing seasons (usually with tunnels or even greenhouses). But it's super tricky (especially here in Ontario) with our climate and weather being so unpredictable each year, farmers can lose crops on the drop of a dime with unexpected frost... (like the local lettuce from Zephyr last week!). Even though some of our local items might be a bit up in the air, we can always count on lots of our cold-loving roots to be grown locally like beets, carrots, radish, even napa cabbage and greens like kale and sugarloaf! Happy National Pumpkin Day! Did you know, that back in the day, people used to hollow out Pie Pumpkins, fill them with spices, honey and milk, and cook over an open fire for a delicious toasted treat?! It was basically how pumpkin pie began!
Move over pumpkins, there's a new kid in town. Except that this new kid was actually there first...did you know that these mildly terrifying rutabagas were the original jack o lanterns?? "The Jack O’Lantern legend goes back hundreds of years in Irish History. As the story goes, Stingy Jack was a miserable, old drunk who liked to play tricks on everyone: family, friends, his mother and even the Devil himself. One day, he tricked the Devil into climbing up an apple tree. On...ce the Devil climbed up the apple tree, Stingy Jack hurriedly placed crosses around the trunk of the tree. The Devil was then unable to get down the tree. Stingy Jack made the Devil promise him not to take his soul when he died. Once the devil promised not to take his soul, Stingy Jack removed the crosses and let the Devil down. Many years later, when Jack finally died, he went to the pearly gates of Heaven and was told by Saint Peter that he was too mean and too cruel and had led a miserable and worthless life on earth. He was not allowed to enter heaven. He then went down to Hell and the Devil. The Devil kept his promise and would not allow him to enter Hell. Now Jack was scared and had nowhere to go but to wander about forever in the darkness between heaven and hell. He asked the Devil how he could leave as there was no light. The Devil tossed him an ember from the flames of Hell to help him light his way. Jack placed the ember in a hollowed out Turnip, one of his favorite foods which he always carried around with him whenever he could steal one. For that day onward, Stingy Jack roamed the earth without a resting place, lighting his way as he went with his Jack O’Lantern..." Have you heard of sugarlaof before? It sounds like it shouldn’t be good for you, but this local Chicory Sugarloaf from Joyfully Organic Farm is one of those super cool foods that nobody talks about. It’s also a tasty local treasure that is one of the last local greens left standing out in the field. Matt’s not a salad person (at all) and he’s eating it by the bowlful. Seriously, it’s that good.
