We have these incredible fiddleheads in The Market this week, they are gorgeous! These coil-shaped greens are the unopened young fronds of the ostrich fern. They are in season for only a very short time (until June) and people tend to get really excited when they are available! Minneola Tangelos are finally in! Yes! Montana has been waiting for these all year as they are only in season January, February and March from California. . . . Being a cross between and tangerine and grapefruit, they leave a tangy-sweet flavour on the tongue and are very easy to peel which makes them perfect for on the go. ... . . . A cool thing to note is that as a zero food-waste market, we have a program where we give all left over scraps of food when cooking to farmers for free to feed their animals. So many of you have come to know The Market by the baked goods. Our customers don't often get a chance to see the incredible team of people who make these creations a reality because they work all sorts of different hours creating magic. . . We want to take this special Team Tuesday and introduce you to Jasmine. Jasmine is the daughter-in-law of Wendy whom many of you know as our head baker. .... . Jasmine was born in California and grew up with her Mexican family. She got married in 2018 to a wonderful man named Trent (Wendy's son). Once settled in Canada, it took quite a while to get her permanent residence, but once she did she was eager to start working and try something new! She was very excited to start baking at The Market. . . Jasmine says, "I grew up learning from my mother how important it was to strive for perfection in all the food that we made together. From my father, I learned about the importance of working hard and doing the job right. In a Latin family, food is important because it brings families and friends together. . . 'When I am working I really want to make sure that the people of Cobourg get the best quality possible from the baked goods we produce. I am grateful to the Market and Smør for offering me a job where I learned a new skill. I get to work with my husband's family and with the wonderful people at the Market. I look forward to new possibilities and creations in the coming year." . .
