Potatoes! We have a variety of potatoes at the Market and we wanted to take a moment to share a few interesting facts about them! Potatoes are a root vegetable that grow in the earth. Most species that grow in the Marsh are harvested in the late summer/early fall. ... While we do offer washed potatoes here at the Market, we also offer ones that are still covered in dirt and this is done on purpose. Keeping the potatoes covered in dirt allows them to last longer! If you’re looking to store potatoes for the winter, be sure to keep them dirty and in a cool, dark place to avoid sprouting. Potatoes originated in the Americas, and there are over 5,000 different species worldwide. They are known for their adaptability in growing in diverse climates. Potatoes are an excellent source of vitamin C, Potassium, fibre, B vitamins, and they contain zero cholesterol.
