Cucumber sandwich! Boring or cool?

@beyondmeat Bratz with rice and beans and plantains @ninemilesouth. So good!!! Is it healthy? Well, compared to what? A bowl of rice and beans with kale salad? ...No. BUT is it healthier than regular Bratz? Seems that way. A crossover trial fed people 2 servings of meat or meat alternative. The people were their own control, meaning they did 8 weeks of fake meat vs 8 weeks of real meat or vice versa. There where significantly better cardiovascular markers with fake meat. They didn’t measure carcinogenic factors such as IGF1, heterocyclic amines, N Nitroso compounds, AGES, etc but I am sure there would have been an even bigger difference in favor of Beyond Meat. They also didn’t look at the environmental cost of getting the food to the plate but the regular meat requires far more land, water, and pollution, not to mention the poor intelligent pigs tortured to creat a regular Bratz. Sometimes the best meal happens when you improvise! I used my basic mustard dressing for the salad, the beans and over the sweet potatoes. It can not be any easier. It was so delicious! For the dressing. Mustard, tahini , some sweetener ( I used xylitol), lemon and some milk. (Better with kombucha or a splash of vinegar)
