The NY Strip and Ribeye are both from Creekstone Farms in Arkansas and have Prime grade marbling. We have actually chosen Atlantic Beef Products from PEI for the Tenderloin as we found PEI beef to be better suited for these cuts. PEI beef has a distinct flavour profile driven by the salt air from the ocean, iron-rich soil, and rolling pastures.

Our Smoked Tandoori Chicken. While we have talked about our prime grade brisket which is smoked for 18 hours, we haven't talked much about our chicken. Many of our guests tell us this is the most flavourful chicken they have experienced, and there's a reason behind this. A 4-step process ensures that flavours penetrate to the bone. Our Tandoori Chicken is first marinated for 24 hours with a tandoori spice mix and green chillies. Then it is charcoal smoked, which adds a different flavour profile then just smoking it in wood. After this, we smoke it using hickory and cherry wood, which now adds a sweeter smoke flavour. It is then finished on a stone grill, which provides yet another flavour on the skin through the maillard reaction. @hungriihijabii

There are three qualities of our Apple pie that make it unique. 1.) We use Mcintosh apples for the tartness along with Honeycrisp apples for the sweetness. Honeycrisp apples were released commercially in 1991, and they were bred for their strong sweet taste while still being crispy (hence the name), while many other apples were mushy. Honeycrisp apples are significantly pricier, sometimes up to four times as much as Grannysmith, a more common apple used in mass apple pie ...production. The Honeycrisp and Mcintosh combination allows us to achieve several experiences in the same pie: snappy and mushy, sweet and sour. 2.) Coming in at almost 3 lbs, this 9" pie gets its weight from the deep dish crust, meaning more filling per bite. One large pie can easily serve 4-6 hefty dessert-only meals or 8 smaller "post-BBQ" slices. 3.) We use reduced cooked raspberries to add a hint of flavour and aesthetics to some flowers on top of the dough. This is bacon me crazy! Our newest summer item is a Maple Bourbon Bacon Salted Caramel Truffle Popcorn Ice Cream. This includes our beef bacon that is all made from scratch in-house, which is then candied with maple and non-alcoholic bourbon giving you a roller coaster of flavours to experience. We have made these bacon pieces particularly chunky which when bitten provides a gush so strong that you would never think a piece of meat can be made into dessert.
