I shared this in my group Your Balanced Life but thought everyone might love to learn a bit more about Chocolate! Chocolate can be healthy!! Say what?! The centre of chocolates health benefits are flavonoids. These plant pigments are responsible for many of the health benefits of fruits and medicinal plants! But chocolate is definitely much more sensually pleasing!... Even better though- is the evidence that chocolate isn't only just rich in flavonoids but increases the absorption of these compounds!! Chocolate can also protect against cholesterol and the lining of the arteries. The flavonoids in chocolate prevent the excessive clumping together of blood platelets that cause blood clots. Chocolate is primarily sugar and fat but does appear to have health benefits !! The kind of chocolate matters! Hello October !! Its officially warm socks, comfort foods, soups and warm drinks season!! Try this Pumpkin Spice Latte... Ingredients- 1/2 Cup Organic Coffee 2 tbsps Pumpkin Puree 1 1/2 tbsps Maple Syrup 1/2 tsp Pumpkin Pie Spice 3/4 Cup Unsweetened Almond Milk 1/2 tsp Vanilla Extract Directions- Brew your coffee and set aside ( I use black tea- or skip this and use more Almond Milk) In a saucepan over medium heat, stir in pumpkin, maple syrup and pumpkin pie spice until combined. Slowly whisk in almond milk. Bring mixture to a low simmer, stirring occasionally and remove from heat. Stir in Vanilla extract. Transfer milk mixture to blender and pulse several times until foamy and frothy( Immersion blender works too!) Add milk mixture to your hot coffee. You may want to use a spoon to gently hold back the frothy layer while pouring. Top with remaining froth. Top with a dollop of homemade organic whipped cream or coconut whipped cream and sprinkle with additional pumpkin pie spice. Enjoy!

Taking care of our body and giving it a tune up (clean up aka detox) a few times a year is so important. But did you know we should also detox our mind. Life can get noisy. We can feel overwhelmed and we often forget to breathe and be grateful. We let the pressures of life get the best of us.... Its been proven that spending time in nature relieves stress and soothes our mind. Breathing fresh air helps regulate your serotonin and promotes happiness and well being. I was listening to some amazing Motivational Speakers last weekend in the Rise Live Healthy + Happy Conference and Trent Shelton talked about a "Prison Mindset" or the blaming and complaining mindset. I see this so often with some clients. People don't want to do the work- they want the quick fix. So instead of owning it they make excuses. Trent Shelton says it so well- "controlling our perspective can be our power or our prison". ... No matter how hard things are YOU need to step up to the plate. DM me or check it out https://loom.ly/64VzdI4 CHICKEN VEGETABLE COCONUT CURRY WITH CAULIFLOWER RICE Serves 4 1 tablespoon coconut oil 1 large onion, chopped 2 garlic cloves, chopped 1 tablespoon curry powder 2 chicken breasts 1 medium-sized head of purple cabbage, chopped 1-pound fresh green beans, ends snapped 1-pound carrots, chopped 1 32-ounce package vegetable broth 1 13.5-ounce can coconut milk 1 16-ounce package cauliflower rice* sea salt and black pepper to taste 1 bunch cilantro, chopped *You can purchase cauliflower rice premade at grocery stores and Costco. SIMMER VEGETABLES AND CHICKEN. Add coconut oil to a large soup pot over medium heat. When the oil has melted, add onion, garlic, and curry powder. Chop the chicken into bite-sized cubes and add to the pot. Stir well and let the mixture cook for about 3 minutes. Next, add cabbage, green beans, carrots, and vegetable broth. Stir well, then cover the pot. Let the vegetables simmer for about 20 minutes, then add the coconut milk. Stir well and let it simmer for an additional 10 minutes. SAUTÉ CAULIFLOWER RICE. While the soup is cooking, lightly cook the cauliflower rice in a medium-sized pan. Season with sea salt and black pepper. Sauté for about 10 minutes. ASSEMBLE AND SERVE. When the soup is ready, add chopped cilantro to the pot. Stir well and serve over cauliflower rice.

Happy First Day of Fall! With the season changing it’s a great time to look at where you can make some changes in your health. Try eating foods that are in season!... You will notice richer flavour! When produce is picked when it’s fully ripened tastes amazing! And you get better nutrition! If your produce is coming from a distance it’s often picked before it’s ripe and as it travels to your local grocery store it ripens in a cardboard box! Often it is sprayed by chemicals to make sure it doesn’t ripen too fast! When produce is picked before it’s ripe, the nutrients do not fully develop in the flesh of the fruit. Plants need the sun to grow, and picking them before they are ripe cuts off the nutrient availability. Genetic modification is also sometimes used, which can alter how the crop was naturally supposed to be consumed. If you eat seasonally, you are guaranteed to consume a variety of produce, which will assist you in eating a balanced diet. Eating in season is also more cost efficient and easier on the wallet! Supply and demand simply explains how buying produce seasonally saves money. Produce in season is more abundant, so it is less per pound in the store. If you are buying produce that is out of season, there is travel, time and added expenses to grow it in a greenhouse. It’s also more environmentally friendly! When we truck in produce from other areas, it requires gas to get the produce to the store. This fuel charge is something often added to price of the food upon delivery!!! And not to mention what this does to the carbon footprint. There is nothing better than the tastes of the foods fall brings! I love Apples and Pumpkins, Squash, Cabbage, Brussels Sprouts! I love adding ingredients in meals that I make that up level the nutrient value. Blackstrap Molasses is full of antioxidants, full of vital vitamins and minerals that include Iron, Calcium, Magnesium, Vitamin B6 and Selenium.... I say its a superfood! Its a bone builder because of containing both calcium and magnesium and can guard against Osteoporosis. For someone who has Anemia you should include some Molasses in your diet. 1 tablespoon contains 20% of the daily value of iron. Try these yummy cookies! Molasses Cookies Ingredients 1/4 Cup Coconut Flour 1TBSP Tapioca Flour 1/2 tsp Cinnamon 1 tsp Ground Ginger 1/4 tsp Baking Soda 1/4 Cup Coconut Oil (melted) 1/4 Cup Unsweetened Applesauce 1 TBSP Blackstrap Molasses Preheat the oven to 325F (163C). Line a baking sheet with parchment paper or a silicone baking mat. In a mixing bowl, combine the coconut flour, tapioca flour, cinnamon, ginger and baking soda. Add the coconut oil, applesauce and molasses. Stir until the mixture is thick and the ingredients are evenly combined. Gently roll a tablespoonful of batter at a time and transfer to the baking sheet. Flatten each ball using your fingers or a fork. Bake for 12 to 15 minutes. Remove from the oven and let them cool completely to allow the cookies to firm up. If the cookies are too crumbly, freeze them before serving. Enjoy! Freeze in an airtight container or freezer bag. Serve from frozen (no need to thaw). One serving equals one cookie. This recipe was developed and tested using Bob's Red Mill Coconut Flour. If using another type of coconut flour, note that results may vary. No Tapioca Flour-Use cornstarch or arrowroot powder instead.
