Put some of those amazing fall foods to use!! This salad is full of delicious fall foods plus it's a great way to detox your body in a healthy, safe way with whole foods which will help support your immune system through cold/flu/covid season. It’s delicious and full of whole, liver supporting foods that will also help you feel full. Ingredients Salad 15 25 brussels sprouts, washed and stems removed 2 3 large carrots, peeled and grated... 1 apple, diced 1 large celery stalk, diced cup pumpkin seeds cup walnuts, finely chopped cup dried cranberries Dressing 2 tbsp extra virgin olive oil Juice of one lemon, to taste 1/4 tsp fine grain sea salt, or to taste 1 tsp fresh dill (or any combination of herbs of your choice thyme, oregano, basil, parsley, cilantro are all good choices) 1 1 tsp maple syrup, or to taste (optional) Instructions Using a food processor, grate/shred the brussels sprouts and carrots. If you don’t have a food processor, you can finely chop brussels and shred carrots with a hand-held grater. Mix brussels sprouts, carrots, apple, celery, pumpkin seeds, walnuts and cranberries into a large bowl. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and seasonings. Add enough maple syrup as needed to take the edge off the lemon juice. Add dressing to salad mixture and toss/stir well to coat. Great date day with Jamie Robertson!! Morning trip to Granary Road for breakfast, some fresh produce and other local products. Then a stroll around Glenmore Reservoir followed by a quick bevy on the way home. It was a bit of a drive and cost a few extra bucks but I'm proud to support local as much as I can and had a great day with my husband. @granaryroad @teaspiceshoppe @lucseuropeanmeats @highcountrymerc @happybellykombucha @dunvegangardensgranaryroad @estbrew... Now home to get ready for a roast beef dinner with Ashley Jay and Mathew Barnett. Guess where I picked up thre broccoli from? Favorite Fridays!!! One of the things we get asked all the time is What do we eat? What do we recommend? What do we like? What do we do? How do we handle this or that? So, Fridays are now going to be about our favorite things. Favorite foods, favorite supplements, favorite exercise, favorite books, favorite activities...the list goes on. So Friday's will be about our favorites. ... But it's also about your favorites. We'd love to hear what your favorite things are and we'll do a bit of research and add them to our list. Today's favorite is about kombucha. We both love kombucha both for the taste and the amazing health and gut benefits. It's a great source of probiotics, it's green tea based so there are tons of benefits there too and it's full of antioxidants. Sugar is used during the fermentation process but it's there to feel all the good bacteria so, as long as there's none added after fermentation, the sugar doesn't have much impact. In fact, Kombucha has been shown to help many people balance their blood sugars. Happy Belly Kombucha is one of our favorites. The kids are back in school and fall is near which means cold season is also near. There's a bit more anxiety and confusion around it this year so try to battle that as much as you can with this delicious Elderberry Syrup. We like to get our ingredients at the @lightcellar (they do online shopping for those of you who can't get down there) or the ingredients can be purchased online. Wherever you get your ingredients from, this is easy to make, stores in the fridge for a mon...th and tastes great. You can take it by itself or add it to some tea or lemon water. It works like a charm. INGREDIENTS 1 cup dried elderberries 2 tbsp fresh ginger root (or 1 TBSP dried ginger root) 1 TBSP dried echinacea root 1 cinnamon stick 5 whole cloves cup dried billberries 1 cup raw honey (or 1 cup maple syrup for children under 12 months) 4 cups pure water DIRECTIONS Put all ingredients (except honey) into a pot and bring to a boil. Once boiling, let simmer for 30 45 minutes or until the syrup has reduced by about half (2 cups). Mash the berries with a potato masher and strain the mixture through a fine mesh strainer. Let cool, add honey and mix well. This will keep in the refrigerator for up to a month.
