Bannock is the perfect food for camping. It requires very few ingredients and is easy to make over the fire or in the oven. Try this blueberry bannock recipe for a sweet variation on the traditional bannock you know and love. This recipe is hands-on and easy enough for the entire family to participate in. If you are going camping, put all the ingredients in a Ziploc bag and add water when you are ready to prepare the bannock. Ingredients:... 1 cups of flour 2 tsp. baking powder 1 tsp salt 2 cups tepid water 1 cup lard 1 cup blueberries Directions: 1. Mix dry ingredients. 2. Cut shortening or other hard fat into the flour mixture. The fat should be evenly distributed throughout the flour while still being in small lumps. 3. If going camping, stop here! Place the flour mixture into a large plastic bag and label it. You'll mix in the water at your campsite. 4. Gradually add the smallest amount of water and stir until ingredients come together. 5. Knead the dough gently until soft, adding more water if needed. You should be able to handle the dough without it being too sticky. Bannock on a Stick 1. Take a palm full of dough (1/2-3/4 cup) and wrap around a thick stick. Wrap it as evenly as possible and only about 1/2 inch thick on a stick. The ideal stick is a fresh sapling (so it won't burn) that's 1/2 to 3/4 inch around. Marshmallow sticks are too small for roasting bannock. Strip the outer bark on the top 6 inches so you have room to wrap your bannock. 2. Hold the stick over hot glowing coals for 10 minutes rotating frequently. The goal is brown on the outside and cooked all the way through. You'll know the inside is done when the inside of the dough pulls away from the stick and the bannock moves easily. Bannock in the Oven 1. With so many households having challenges due to the pandemic, our Métis Housing finance department shared some simple budgeting tips, which we hope will make things a little easier: To begin there are a few simple steps to follow: 1. Pick a period (usually one month) and track your spending (this will give you a better idea of your variable expenses).... 2. Find or create a budget template, there are plenty of templates online. Your balanced budget should include your income less your savings and expenses.
