s Ingredients: Olive oil... 1 yellow onion, chopped 3 carrots, chopped 3 large or 5 small celery stalks, chopped 2 small potatoes, peeled and chopped One 100 oz can of diced tomatoes or four 23 oz cans(or however many fit into your pot) 1 clove of garlic 3 tbsp chicken or vegetable stock mix 3 tbsp each of thyme, parsley, basil 1 tbsp turmeric 1 tbsp Italian spice Preparation: In a large pot, add olive oil and onions. Turn on medium heat. Once onions are translucent, add carrots, celery and potatoes. Sauté for 3 minutes, stirring often. Make sure none of the ingredients burn during this step. Press garlic into the pot. Add canned, diced tomatoes, with their juice and sauté for 1 minute. Add water, enough to cover the vegetables by 1/2 inch. Add remaining ingredients and bring the soup to a boil. Once it boils, turn heat down to low and let the soup simmer for however long you want! The longer it simmers, the better it will taste. Take pot off heat and blend the soup, preferably with a hand held immersion blender. Add salt and pepper to taste and enjoy!
