As I recall last week: Every day, I was able to see our croissants being packed and getting ready for deliveries, looking quite amazing. Despite the fact we never make enough of these, I was able to steal a regular size one and a mini one. Well, they did even tasted better than they looked. ... I also got some feedback from regular customers going the same way. Thank you Priya and Amrish for baking these croissants from scratch every day for all of us to enjoy. Here is the list of ingredients for a batch: 3.35 kg all-purpose flour, 1.55 kg water, 450gr organic cane sugar, 65 gr salt, 100 gr egg, 50 gr dry yeast, and 2.25 kg butter. Fun Facts: Did you know that in France, 80% of croissants sold are factory-made? You will find them everywhere even in the small artisan bakeries. Each production line is able to mix and shape 50 000 croissants per hour. These same factories are also in service in the US as well as Canada. So here is my tip to spot factory-made croissants: Simply buy 3 croissants at the same location and weigh them individually. If the difference between the lightest and heaviest one is no more than 3 grams, then you have a 99% chance that these are factory-made. Although, most factory-made croissants are fine, as a customer myself, I like to know what I am getting. What about you? Finally and for those who wonder, I started this bakery in Lindsay with the idea of 100% homemade and I haven’t changed my mind about this. (call me stubborn if you like.) Mickael
