And the blues - wow - we have a great new blue called Drunken Rossini from Bergamo. Soaked in very strong red wine, this blue makes my mouth tingle. I think it’s the strongest one we’ve ever had and I LOVE it!! And we got a beautiful new wheel of Gorgonzola - along with everything else of course. Hope to see you soon!!

Every once in a while we get a new cheese in the store that truly inspires me. The best cheeses in the world are a direct result of sustainable, responsible farming practices and good animal husbandry. They represent the traditions, craftsmanship and culture of the people who make them. Yesterday I posted pics of some new Water Buffalo cheeses that arrived via special order from Italy. Today I want to tell you about the people and the land and animals involved in the product...ion of these cheeses. There is a 60 hectare farm in Bergamo, Italy where the Gritti brothers breed, raise, feed and nurture their herd of 320 water buffalo. The breeding is managed by brother Alfio, a experienced veterinary doctor. The Buffalo are fed a high quality diet of forage grown on the farm and are milked in peaceful and quiet surroundings. This dairy is a perfect example of a zero mile supply chain with low environmental impact based on the principles of quality and circular economy.
