Let's talk about that piece of bread you ate. Let's talk about the cookie you snuck in. Stop being ashamed of yourself for indulging in food. You didn't do anything wrong and nobody is going to punish you. Just pick up where you left off and everything will be fine. If you make it taboo then you will continue to do it in secret so just don't. ... Carbs are not the enemy! Eating keto is what makes my body feel the best but that doesn't mean that eating more carbs in a day makes me a bad person or will screw up all of the work that I've done. You've got this!

Tonight's Dinner: Sausage & Cabbage Casserole Another win for my boys and a staple for my dinner recipe repertoire! This one was really fast and super easy. It was also very cost-effective which isn't always the case when you're eating Keto. ... 4 sausages (I used fennel sausages) 1/2 head of cabbage (chopped into bite sized pieces) 1 can diced tomatoes 1/3 cup ricotta cheese Shredded mozzarella (who measures shredded mozzarella topping?) Garlic powder Onion powder Oregano Salt Pepper Slice up the sausage and toss in to a large pot with some oil. Once the sausage has browned add your cabbage, diced tomatoes and seasonings to taste. Mixed together thoroughly and cover your pot for about 10 minutes to let the cabbage soften. Preheat your oven to 350 and grab your favorite stoneware casserole dish from Pampered Chef! Place your mixture inside the casserole dish and dollop on the ricotta cheese. Lightly mix in the ricotta (you still want to see it so don't mix too much). cover with mozzarella cheese and place in the oven for 15 to 20 minutes or until cheese is brown and bubbling. Enjoy!

We have a toaster oven that likes to trip our circuit everytime it is used we have been debating for some time if we should get a replacement toaster or finally get ourselves an Air Fryer Well we've been given a sign because ALL ELECTRONICS are 25% OFF at Pampered Chef! I have the quick cooker which is used regularly at our house and now I've got my eye on the Air Fryer. It can fit a 4LB chicken on rotisserie! Dinner tonight: Breaded Chicken Parm and creamed spinach I was able to make this entire meal keto friendly husband friendly and toddler friendly! I started with two chicken thighs. I removed the bone but left the skin on. Using a dredging station I coated the thighs in almond flour then in egg and then finally in a breading I made out of almond flour Parmesan cheese and chicken skin chips (yes you read that right and yes I made those from the skins I removed off of the chi...cken thighs when I made the buffalo chicken dip) I took the coated thighs and fried them in coconut oil until they were golden brown on both sides. I put the chicken thighs aside, cleaned out my pan and then took a can of diced tomatoes and just simmered them adding some seasonings and a little bit of heavy whipping cream. I used my Pampered Chef mix and chop to crush up the tomatoes and make more of a sauce. I use this tool so often it truly is an exceptional tool with so many uses. Once my sauce was done I took my glazed stoneware, put down some sauce and parmesan cheese. On one side I put my Keto breaded chicken thighs and on the other side took some large Frozen breaded chicken fingers for the Fam. I cut up some mozzarella cheese and placed them on all the chicken pieces and then added some more sauce and some more Parmesan cheese. Into the oven at 400 for 40 minutes. For our sides I quickly made some rotini while my spinach was cooking and the boys had the pasta with spinach and I had just spinach. Today's lunch: Turkey and Swiss Sandwich The "Chaffle" is no joke. It is an absolute game changer for Keto!! It couldn't be simpler. Two large eggs... 1/4 cup almond flour 3/4 tsp baking powder 1/2 tsp of garlic powder 1 cup of shredded mozzarella (I prefer using the mozzarella as it has such a mild cheese flavor it's barely noticeable at all) Whisk together the almond flour eggs baking powder and garlic powder. Fold in (insert Schitts Creek joke here ) the cheese. If you have a mini waffle maker this mixture will make four mini waffles. If you have a standard waffle maker it will make two large waffles. Divide your mix accordingly and evenly spread out over the waffle maker. Once the steam is gone it's done. Carefully remove your Chaffle and place on a plate and in the fridge to cool. Today's lunch: Mini bell peppers stuffed with Buffalo blue cheese chicken dip. I made this dip on Saturday using my Quick Cooker from Pampered Chef. I put six chicken thighs in the quick cooker with just some salt and pepper and a little under a cup of water for 20 minutes on high pressure. When it was done I took out the skin from each chicken and put it aside I also took out all the bones and left the meat in the quick cooker. ... From there I shredded the meat and added: 4 oz of cream cheese 1/4 cup of buffalo wing sauce 1/2 cup of heavy cream 1/2 a cup of shredded mozzarella 1/2 cup of cheddar cheese I mixed everything together and dumped it into my glazed stoneware, threw it in the oven at 350 for 25 minutes. This dip was eaten with pork rinds and slices of peppers for dinner and has now given me two lunches of stuffed bell peppers. So goooooood And what did I do with the chicken skin I put aside? I seasoned it put it on my pizza stone and stuck it in the oven until it was crispy #keto #noregrets
