What do you do with all your fermented brine after you've eaten all the veggies? Around here it's a deeply-appreciated commodity. I am in the habit now of adding extra brine when I make my ferments so I have enough for other yummy things when fermenting is complete. My favourite is garlic scape brine which I use for my vegan caesar dressing. Over the holidays we are also going to try kimchi bloody mary shooters with kimchi brine.
