This week’s deep dive is going to be on our Pea Shoots You are likely familiar with peas, but have you heard of pea microgreens? These nutrient dense plants can help to promote overall health, ward off disease, and may also help prevent cancer. With a sweet subtle pea flavor they are a great addition to many dishes. Research has shown a cup of pea microgreens can provide approximately half of an adults daily vitamin C intake. Vitamin C is known to reduce the risk of infecti...on, common colds and even strokes. There is a staggering 30% of the world that is iron deficient. This can lead to tiredness, pale skin and overall low energy.
