Mountain Haven 13.11.2020

CSA Day! Last one for 2020! Today you will find pumpkins, winter squash, gourds, 2 types of kale, some swiss chard, collards, sunflowers, cabbage and a bottle of our maple syrup. A huge thank you to all my CSA members! I have LOVED bringing your vegetables to you weekly. Your shared pictures, recipes and enthusiasm this growing season have made me so happy!... Enjoy the season change. A time to slow down, get cozy and have a well needed rest. I will continue to have recipes and slow seasonal living advice on the Facebook and Instagram pages through the winter that I hope you will enjoy. We will continue to sell maple syrup as supply last.

It's CSA Day! In your baskets you will find nasturtium flowers for this recipe. I will be making this later today so pictures to follow. There doesn't need to be an exact recipe or ratio. You can use any vinegar you have on hand. Any container will do. Leave for 1 -3 weeks, strain and enjoy! Use as a salad dressing or mix with oil and a few other ingredients to make your own dressings! Also this week Irish cobbler potatoes, cabbage, kale, collards, tomatoes, 2 types of sweet... peppers, eggplant, sweet dumpling squash and white acorn squash. Have a wonderful week! *Next week is the last CSA week! 16 weeks incredible! We will have pumpkins and gourds in your last basket. Message me if you would like any corn stalks for decorating!

CSA Day! New this week are purple chief potatoes, white acorn squash, rainbow of beets and pinto peppers! Also today is curled kale, eggplant, tomatoes, green pepper, and cubanelle peppers!... This squash is definitely my favorite. I like to keep it simple with either of these two recipes in the link. I also love to use a steamer to cook it in the microwave for a quick veggie with dinner. Just slice, scoop out seeds and place in steamer with a touch of water. 5 - 9 minutes usually does the trick but microwaves vary as does size of squash. https://www.rachelcooks.com//09/27/how-to-cook-acorn-squ/

My goal is to have as much of our home grown food put away for winter as possible. But I also love convenience food. So soup and chili style freezer food is being prepared this week. Trying a new recipe today. I was looking for a sweet potato soup to have when I came across this Moroccan inspired stew. Recipe says you can leave it chunky for stew or puree for soup. I doubled the recipe so we can freeze half. It calls for spinach and kale so I used collard greens and kale. I also used my 13 bean soup mix instead of just lentils alone. I'm using the crock pot because it's so handy for meals that all go in one pot! https://pin.it/4sCVqYf
