Our Special Fermentation coffee from Ethiopia Yirgacheffe Kochere G1 is a 48hr fermented coffee using regular bread yeast. The fermentation occurs when a microbial reaction of yeast and bacteria break down sugar in the mucilage of the coffee cherry after harvesting. The cherries will ferment on the bean and will produce acids while being dried by the sun’s exposure. Coffees that go through this process will develop flavour notes that elevate the beans’ original characteristics including dried fruits, chocolate, wine, creamy body and lingering aftertaste

He has been studying Ethiopian wild and cultivated varieties for decades. Although the SL-28 varietal is typical of Kenya, this coffee was grown in the Ilamatepec region next to the Santa Ana Volcano in El Salvador. This makes it a very special Kenyan varietal carefully grown and processed in Finca la Divina Providencia by producer Roberto Ulloa. This coffee is tasting like stone fruit, apricot, papaya, orange acidity, velvety body. Scoring at 88.50, this SL-28 semi-washed is really bright and uplifting. Roberto Ulloa’s Finca la Divina Providencia is recognized as having some of best quality coffees in El Salvador and is a multiple time Cup of Excellence winner, including 2020.

Tasting of lavender & eucalyptus, yuzu citrus, vanilla, and delicate fruits with sweet complexity, this natural processed Gesha comes from Don Jairo’s Finca El Castellon in Quindío, Armenia in Colombia. Thanks to our partner @campesinocoffeeco for helping Mountain Coffee source this special 90+ Gesha. Quindío is part of Triangulo del Cafe Spanish for Coffee triangle, which also includes Caldas, Risaralda and Tolima departments. It is famous for growing and producing the majority of Colombian coffee, and considered by many to have the best coffee in the world.

Garden coffee is the most common cultivation system found in Ethiopia since it generates 50% of the coffee production in the country. This coffee is found near the farmers residence and is typically interplanted with other crops that may generate income. Garden coffee is found most frequently in southern Ethiopia, including Sidamo, and well as Harerge/Harrar. 5% of coffee production in Ethiopia is generated by Plantation coffees. These are the largest estate which are usually owned by private investors and/or owned by the government. The management of these large crops are the most intense and meticulous. These coffees are grown for better yield and are for exportation purposes only.

Since it is said that coffee plants are indigenous to ethiopia, these still grow wild in the forested highlands of the country. Forest coffees grow under the shade of natural trees, they are not managed at all and they grow and regenerate spontaneously. Since these plants don’t have an owner, this cultivar is usually picked and consumed by the local people, and it makes for 10% of the coffee produced in Ethiopia. Semi-forest coffee is another type of production system tha...t makes 35% of the country’s production. Unlike the wild Forest coffee, these are usually owned by a farmer, who manages the forest by thinning the surrounding trees to let sufficient sunlight to reach the coffees and increase the yield. In addition to this, they also remove undergrowth and other emerging plants to facilitate harvesting and make more room for other coffee plants to grow.
