REDACTED: WIND IN THE WIRES Our second REDACTED release of the season is unique. Remember a while back we teased that we were brewing with a bunch of marshmallows? Yeah, that's this one. WIND IN THE WIRES is a Sweet Imperial Stout, with incredibly rich flavours of dark chocolate, crusty bread and strong espresso. The body is silky smooth, and the overall impression is of pure chocolate and velvet.... Available beginning TODAY, DECEMBER 23 at the Brewery Retail Store.

Hey everyone, just a quick note about our new REDACTED releases today: Purolator failed to deliver our labels on time yesterday, and aren't able to tell us when they will deliver it today, so there is a chance we may not have bottles ready when we open. Fingers crossed that the package arrives before noon and we can have these bottles ready for you right away!

REDACTED: An Endless Diamond Sky I'm really, really excited about this release. A million years ago (or, like, almost 5) we brewed our very first REDACTED release: THESE MONSTROUS THINGS. MONSTROUS was special for a few reasons: first, it was a beer I collaborated with close friend and fellow brewer Andy Wagner to create. Second, it won a Gold Medal in the Ontario Brewing Awards. And third, it was a big chance: would anyone want to buy a Belgian Quadrupel made by a brand new,... small town brewery? After all, it's a pretty esoteric style to begin with. The answer to that was yes, of course - we sold out of MONSTROUS pretty quickly. And that brings us to AN ENDLESS DIAMOND SKY. Back when we brewed MONSTROUS, I stole about 200 liters or so, and put in a french oak barrel that had previous held a Cabernet Sauvignon. I took that barrel and hid it in our cellar until a few weeks ago, when I lit it on fire and pulled the beer out to bottle it. 60 or so months of age has done wonderous things to MONSTROUS: it's bold, flavourful, and incredibly unique. It has the most incredible flavours of caramel, fig and plum, savoury, and a persistent warmth. This is a very special beer, and I'm so proud to finally let you try it. It will be available in our Brewery Retail Store and on napaneebeer.ca starting WEDNESDAY, DECEMBER 23. - Geordan

Patience is hard. Nearly everything we brew is timed down to the wire to get it made, packaged, and shipped to its destination with as little time used as possible -- there's a reason the saying "time is money" is as well worn as it is. But every so often, something gets done that is put away to mature for a long time. Brewing a beer to be sold years later feels a bit like planting a tree, knowing it will be a while until you get to appreciate it. But everything has its time.... Including the contents of this barrel, which has been patiently waiting in our cellar for a long, long time. (Why fire? It's a very effective way to ensure the the barrel is sanitary before you open it. Plus it makes a great photo.)

By a complete coincidence, this week was all about MAYDAY. Each canning shift this week was MAYDAY. Brewing days were all MAYDAY. We noticed that the last four batches that went through FV3 (Balentra), had been MAYDAY as well. It seemed like it was all MAYDAY, all the time. This hasn’t happened before, in all the years we’ve done this -- at least, not so much as we have noticed. It’s always a mix of beers, brewing one brand, canning another, scheduling yet another. But, like how tomorrow’s Friday the 13th is exactly 13 weeks since the last Friday the 13th, sometimes things just line up. It’s pretty cool how things happen.

Beer is equal parts science, art, and magic. When I began brewing a decade ago, what drew me to it was the complexity of such a seemingly simple thing. It is, after all, just beer. Four ingredients: barley, water, hops, yeast. But the nuances of what makes a great beer are much more complex than that -- a delicate balance of attention to detail, careful execution and the patience to do it right. Beer is uncomplicated in that special way: if you treat it right, it will be fan...tastic. There's no secret recipes, no special ingredients, nor even expensive equipment needed to brew great beer. There's no luck involved, just determination and diligence. My very first batch of BLACKLIST was brewed in an aluminum stockpot on a stovetop in an apartment. That first batch went on to win its first award later that year. Today, I brew BLACKLIST with much bigger, fancier, more expensive equipment, but its soul is the same as it has always been. It might be two thousand liters at a time instead of twenty, but it's still that first batch of BLACKLIST I brewed so long ago. This photo is a sample of MAYDAY pulled directly from our brite tank. I took the sample to check on the gravity, clarity and acidity of the final beer before it's packaged -- something that is so routine in our busy days that I forget about the magic, for the sake of the numbers. But on this surprisingly warm Saturday afternoon, I was struck by how beautiful it looked in the sample glass, and how the aroma took me back to a time before today -- before fatherhood, a brewery, many things -- to a time where I was falling in love with the magic of brewing. "Stop and smell the roses" is such a ubiquitous piece of advice it sounds trite, but today I stopped and smelled the roses (or, more accurately, the beer), and it made me smile. You ever think about how cool cans are? Seriously, think about it. That beer can in your hand has a leak and pressure proof top that keeps your delicious drink safe, cool and in perfect condition. Just pop the tab and go. But there's a lot of stuff going on there, and how that lid gets applied is very important. That's why we regularly "tear down" cans to check that all of the elements of the lid seam are within spec. Out of spec cans leak, and leaky cans make everyone sad.
