ARE YOU CRAVING CABS LATELY? I know I am! It is normal as the weather turns colder to crave more carbohydrates and comfort food. Root vegetables are a perfect way to get your fix plus a great way to get all the incredible nutritional benefits for our bodies as we head into the colder months.... I am making this French Potato Salad on repeat these days and can’t stop eating it! It is so delicious, satisfying and versatile! Potatoes are high in fibre, vit C, vit B6, potassium and manganese. Make it as a side dish, a lunch with some good quality Italian tuna, or add some chickpeas and pack it for your kids lunches. You can serve warm or at room temperature. The real secret to this salad is the vinaigrette and the fresh herbs but you can add as much or as little as you like along with the boiled potatoes. I love adding tomatoes, pickles, scallions, capers, caper berries, olives or anything in my fridge/pantry that work. Don’t worry if you don’t have all the ingredients. The vinaigrette: * 3 tbsps champagne or white vinegar * 1/2 tsp of Dijon Mustard * 2 tsp or sea salt (seems like a lot but the potatoes need the salt for flavor) 3/4 tsp pepper 10 tbsps olive oil Fresh herbs * 2 tbsps each of fresh dill, basil and parsley * This recipe is from Ina Garten, The Barefoot Contessa. SOUP ANYONE? . Why is it that soup can feel so intimidating to make when it can be so simple? ... You can make incredibly delicious and nourishing soup with very simple ingredients. Some vegetables, salt, aromatics (herbs or spice) and a bit of liquid is all you need. You can choose to roast or sautée your veg. Serve a small bowl of soup as your side or make it the main part of the meal with a salad. This zucchini and leek soup from Gwyneth Paltrow’s It’s All Easy cookbook (recipe also online for free) is a perfect example of a delicious, simple and nourishing soup. . + 1/4 cup olive oil + 2 large leeks + 3 large garlic cloves + 4 medium zucchini + 1.5 tsp salt + pinch of chilly flakes + 2 cups of water . Want an easy and healthy breakfast or snack option? Make granola! Making your own granola is so easy and makes a great ready to grab healthy food. Why make it from scratch? Store bought granola can be loaded with processed sugar and cheap inflammatory oils.... When you make it yourself, you can use better quality ingredients, healthier oils and natural sweeteners. I like to batch cook granola and granola bars at the same time. While I have all the ingredients out, I make 2 or 3 different recipes as it stores well in an air tight container in the fridge for weeks or in the freezer for months. . You can substitute any nuts and seeds you already have on hand. All you need is a quality oil and a little natural sweetener to make sure it doesn’t burn while baking and that it sticks together a little. You can blend in a food processor for a smoother granola or leave everything in larger pieces. I made 3 recipes this time around. See below for recipe and recipe sources. . Simple Granola 2 cups of rolled oats 1/2 cup sunflower seeds 1 cup unsweetened shredded coconut 1/4 cup of dry quinoa 1/2 cup walnut pieces 1 tsp sea salt 1/3 cup coconut oil, melted 1/2 cup maple syrup 1 tsp vanilla extract 1 tsp ground cinnamon . 1. Preheat oven to 250F 2. Combine all ingredients in a large bowl and mix well. (I put the nuts and seeds in a food processor to make a smoother granola but not necessary) 3. Transfer misfire to a large baking sheet and bake for 1 hour. 4. Break up granola to desired size and return to the oven for 15 mins. 5. Let cool completely before eating and storing. 6. Store in air tight container in the fridge for up to 3 weeks. It’s normal to not crave salads so much during the winter months as our bodies are in a more restful period and warming foods are more appealing. Come spring, our bodies want fresher, lighter foods and this is when I start making big beautiful salads once again. ... It’s easy to get in a rut making the same salads over and over. I get inspired by searching in Pinterest or my cookbooks for salad ideas. Also, making your own dressing is an absolute must. Super easy to do and tastes 1000 times better than any store bought ones.
