Use up those leftovers! I made a red lentil hummus the other day and had a bunch of cooked lentils waiting for me in the fridge. This morning I tossed those leftovers in with some chopped onion, garlic, spinach, eggs and spices and fried them up in the pan. Then I decided to throw in a bit of that hummus too and finally tossed in a bit of flour to make a slightly firmer texture. All versions were delicious! We topped a couple with eggs, a bit more spinach and some sliced tomatoes for a delicious brunch! #getcooking #leftoversforthewin #healthyeats #yeg
