If you hear loud, raucous laughter in the factory, there’s a good chance Shalen won’t be far behind. Shalen is a Cheesemaker Level 4 and a Licensed Dairy Plant Process Worker who takes extreme pride in his work. Endless cups of coffee and boundless energy help fuel Shalen’s drive to keep making better and new cheese. One day he hopes to travel to Europe to see the cheese industry there, but until then you might find him meeting up with friends at a local brew pub, exploring new hikes in the mountain ranges that circle the Comox Valley or frolfing in Cumberland.

Today is International Whiskey Day! What Natural Pastures cheeses work with whiskey? Quite a few! Bourbon & Boerenkaas: Bourbon has sweet notes of caramel and vanilla, and is a gentler form of the brown stuff. Pair with Boerenkaas with its sharp and nutty flavours. Bring in some sweet elements like apple or sweet sausages and you've got yourself a winning combo. Rye & Pacific Parmesan or Camembert: For a more earthy and full-bodied whiskey we like a harder cheese like a Pa...cific Parmesan or Aged Farmhouse. Rye works great with Camembert as well! Netflix & cheese that's our suggestion for a socially distanced romantic evening with your Valentine this weekend! If you have to be apart this year, double the cheese factor by dropping off a bag of this delicious cheesy popcorn to your loved one and picking out a cheesy romantic flick to watch together. We love the classic John Hughes flick "Pretty in Pink". Video chat on one device while watching the movie on another and devour your half of the popcorn.... Remember to wear a mask and gloves while creating the treats, and be sure to reserve a bowl-full for yourself! To make, simply: Pop some popcorn. Dress it with butter consider adding ancho chili powder & garlic powder to add some zest. Spread on a baking sheet and finely shred a sharp cheese like our Courtenay Cheddar over top and broil on low until the cheese melts about a minute or so, watch it so it doesn't burn. Take a hike! No, really it's National Take a Hike Day! We are avid walkers-in-nature and love taking a snack and a Thermos of hot tea or coffee (wine) and a little snack for break time. Consider wrapping a hunk of Aged Farmhouse, or Courtenay Cheddar in your favourite reusable beeswax paper. Pair that with some of your fave locally-made charcuterie, unsalted mixed nuts, a gala apple, a nice crust of bread with butter or your favourite crackers you'll be eating like royalt...y trailside. It's also a great excuse to break out that old timey pocket knife that's been sitting neglected in your drawer. It's all part of the experience. We like to keep the pack weight low for longer hikes and these items fit the bill. Most of the items we like all fit in a common sling pack or small backpack. Keeping things light and easy to manage will make your hike that much more enjoyable. And you know that everything tastes better outside!
