We know - it’s February, who would want a popsicle while it’s so chilly outside? -Your snack-obsessed homeschooler, that’s who! If you have a student at home who can’t seem to get enough snacks , consider turning your favourite smoothie recipe into a batch of popsicles. No matter how healthy, popsicles feel like a treat. They take some time to eat and your child can have one after the other without overdoing their sugar or salt intake. Aside from your frozen fr...uit base, consider these add-ins to bring your pop to the next level: - provides protein and fat for a more filling & creamy pop. - bananas are essential to a good popsicle. They add natural sweetness and increase its thickness. Starting with frozen bananas speeds up your freezing time and gives your pops an ice cream feel. ' - avoid anything with added sugar and cut it with water. This is another way to include a sweet flavour while avoiding adding actual sugar. This seems weird, but hear us out - . They have little to no flavour, they’re extremely high in fibre and offer yet another source of thick creaminess. If you’re worried about any remaining texture after blending, simply run your smoothie through a fine mesh strainer before freezing. Lauren Guay is our Community Development Worker, coordinating school programs in Port Colborne, Welland, and Fort Erie. She's been with us for 7 years and has, at some point or another, worked with every single one of our schools! Lauren owns a business called The Knotted Elephant (The Knotted Elephant), making beautiful handmade greeting cards. During the warm months, you can find her at the Ridgeway Farmers Market. Lauren has an educational background in Recreat...ion and Leisure with a specialization in non-profit organizations. She has interned at both United Way and Hospice Niagara. At home, Lauren has an extensive vegetable garden, 6 chickens (which give her 6 eggs per day!), and 2 dogs. She is a passionate runner and aims to run a full (42K) marathon one day.
