Koji Beef Ribs with Sea Buckthorn served with Cornbread and a Warm Chanterelle Salad. Challenge: make an offering informed by location. Result: Speckle Park Beef Ribs from Shaunavon’s Ranch House Meat have been marinaded in a Koji (think: miso) made from locally grown barley. A sour and sweet sauce made from foraged Sea Buckthorn berries helps to cut through the unctuous sticky fat. A garnish of warm wild Saskatchewan Chanterelles dressed in a shoyu (like a soy sauce) made... from Badlands Coffee Co. Coffee and leeks accompanies freshly baked buttermilk cornbread croutons. These croutons started their life a week ago undergoing a lactofermentation (think: sauerkraut) to highlight both the sweetness of the corn and the sourness of the buttermilk. It’s been 6-months since our last Chef’s Offering, and, boy, does it feel good to put this out. There’s a kind of magic in bringing together local ingredients to make something delicious. We encourage all our fans to support local now more than ever to take pride in what your neighbours and your home have to offer. Good things will come out of it. We guarantee it. While we’re on the topic of foraging. . . Earlier this week, we took a field trip out to @unimpressed.antelope farm just East of the city to harvest some Sea Buckthorn berries. These berries are super tart and almost appley in flavour. We’re excited to play around with these flavours. We’ll keep you posted. . . ... Wild Saskatchewan Chanterelles Every year, around the beginning of August, these little beauties start to pop out of the forest detritus in Northern Saskatchewan. Saskatchewan Chanterelles are prized in the culinary world for their flavour imagine that! and in our own backyard! ... We can’t thank our new friends up in Air Ronge borealheartland for foraging these and arranging shipment to our neck of the province. Hi there, we are the Philippon family, founders of Badlands Coffee Co. We began our journey into specialty coffee several years ago, starting with a tradition o...f splurging on quality coffee at Christmas time. Years went by and our interest in coffee grew, then one day my sister gifted us a bag of specialty coffee from a roastery in Calgary, AB. I remember the flavours of that coffee being amazing and we were officially hooked! That gift was soon followed by unroasted coffee beans at the next Christmas and a small tabletop roaster. With Jill as the manager, Dallas as the roaster, and our two girls as aspiring baristas, our business was born! In 2018, we were excited to invest in a larger roaster and entered our first tradeshow. Dominion Cider Co. Back in what seems to be years ago now (early March 2020), friend of the restaurant (& all around great guy), Dave Cyca stopped by the diner. Dave was positively beaming about his son, Luke’s cider. Luke grew up in Swift Current, and eventually found himself in Summerland, BC, where he and his two friends, Mike and Robin, built @dominioncider. ... And they’re KILLING IT. Nightjar Diner Co. lives for local, and Dominion Cider is the real deal. Their Magic Hour Cider is first press cider blended with French bittersweets and foraged crab apples. It’s beautifully dry and perfect for late afternoons in the sun.
