60 day dry aged ribeyes back in the case!!! Been a while since we've put some longer dry aged steaks out... 60 days seems to be the "sweet spot" for aging, for most folks who like the longer aged steaks.... Some have tried the 90+ day dry aged steaks, and found them to be a bit too "strong". Others quite enjoy the bolder flavour as the beef ages closer to 100 days. This particular loin looks almost like Wagyu, but it's just our regular Hereford/Angus cross beef.
